Very similar recipe to Carol Fenster's, so I'm betting it's good. Her recipe is the best I've come across so far. The recipe I have uses sorghum flour instead of brown rice flour and xanthan gum instead of guar gum and has the addition of apple cider vinegar but otherwise they are the same. I like to make these into individual rounds, do the prebake and then freeze. That way I have a supply in the freezer on the days that I have minimal cooking time.

Yes - it is very simple...thank goodness. Like most people...I'm too busy for a complicated recipe. :P

I really hope you enjoy it...is an adaptation of several recipes...along with my own picky palette.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute.
