Today I grabbed Karina's recipe for Vanilla Brownies thinking it was her recipe for Peanut Butter bars.

I got the dough all mixed up and remembered to add the peanut butter which was not on the recipe...duh...wrong recipe!

So I made the Chocolate Chip Cookies instead...wow...really good. Just use the same recipe as the Vanilla Brownies. Gluten/egg/dairy free.

I followed her recipe but used 3/4 cup white rice flour for the brown, 1/2 cup sorghum flour and reduced the brown sugar to only 1 cup.

They were very flavorful, didn't spread or crumble!

This recipe looks great, but kind of confuses me...does it make both cookies and brownies? Or you can make one or the other w/ the dough? I want to try it, but after reading twice, I still don't get it. Definitely a monday...

One dough makes one thing, not both at the same time.

Drop by spoonfulls for cookies or spread it in a pan for bars.

Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute. If you are interested in summaries of scientific publications on the topic of oats and celiac disease, we have an entire category dedicated to it which is here: https://www.celiac.com/celiac-disease/oats-and-celiac-disease-are-they-gluten-free/
