Flaxseeds?

Hello all-

Anybody have good suggestions for how to a) crack or grind flaxseeds efficiently? B) how to make them edible?

I don't like yogurt at all. Already adding to salads, but I generally prefer cooked food, so I only eat them occasionally after the first harvest of lettuce is done. Hot cereal would work in the winter, but not when it's 80 degrees outside.

Recipes and ideas very much appreciated. Dr. said 1-2 teaspoons/day.

Thanks!

Stephanie

I grind them down in a coffee grinder. Then I mix them into muffins, pancakes, waffles, bread dough, coffee cake, cookies, etc. I also add them to homemade granola. Mostly, I make sure to get them into my breakfast. I supplement with a flax oil capsule that I get at GNC.

I've included my single serving pancake recipe. I make up 14 at a time, then I can just pull one out for breakfast each morning. One serving fits in one snack size ziploc bag.

For 3 pancakes (a single serving):

1/2 c. flour of any kind (for gluten-free pancakes I use 1/2 c. buckwheat)

1/8 tsp. xanthan gum

1 tsp. oil

1 tsp. egg (I beat a whole egg then measure out what I need & store the rest for the week's breakfasts)

1/4 tsp. baking powder

1/16 tsp. salt

1 tbsp. ground flax seeds

1/2 c. milk

Mix try ingredients together, then stir in wet ingredients. Cook in a hot skillet as normal.

This recipe also makes 1-1/2 waffles in a waffle maker.

I fully agree about using a coffee grinder. Works great.

You can also buy them as flax seed meal, already ground. I use Bob's Red Mill.

Once you open the bag of flax seed meal, keep it refridgerated, as it goes rancid quickly at room temp. You really don't want rancid flax seed meal!

Stephanie - is his recommendation so you get more Omega 3 oils?

Yes-- in combination with borage oil (which I haven't found yet), flax seeds are supposed to roughly replicate fish oil (reluctant to take). He did say to not buy the pre-ground, probably because of the increased rate of rancidity.

Will definitely try the pancake recipe! Looks good, although I'll probably try throwing in some minced apple.

And I can't stand purslane. So that's not an option.

I use a coffee grinder to grind down flax seed as well. I love the stuff and sprinkle it on everything - salads, soups, dips. Its very healthy!

Sometimes I make really good peanut butter raw gluten-free cookies using flaxseed meal (ground flax seed). I just blend flax seed meal together with peanut butter (or almond butter), dates, a banana and some cinnamon. I like to roll them up into balls and powder with cocoa. I have one of these with my meal for protein... and they taste great!

I use my Magic Bullet. I had bought a coffee grinder but then read that would work. It does!

Im so frustrated and still getting the run around trying to reprove my celiac disease which my past primary ignored for 25 years.I understand that theres a ray of medical that doctors are limited too but not listening and telling the patient ( me) that im not as sensitive as I think and NOT celiac!Correction Mr white coat its not what I think but for cause and affect and past test that are not sticking in my medical records.I get sick violently with foods consumed, not eating the foods will show Im fabulous. After many blood draws and going through doctors I have the HLA- DQ2 positive which I read in a study that Iran conducted that the severity in celiac is in that gene.Im glutenfree and dealing with related issues which core issue of celiac isn't addressed. My skin, right eye, left leg diagestive issues affected. I have high blood pressure because im in pain.Im waisting my time on trying to reprove that Im celiac which is not a disease I want, but unfortunately have. It  has taken over my life personally and professionally. How do I stop getting medically gaslight and get the help needed to bounce back if I ever do bounce back to normal? I thought I was in good care with " celiac specialist " but in her eyes Im good.Im NOT.Sibo positive, IBS, Chronic Fatigue just to name a few and its all related to what I like to call a ghost disease ( celiac) since doctors don't seem to take it seriously.

@Martha Mitchell, your reaction to the lens implant with gluten sounds like it could be an allergic reaction rather than a celiac reaction. It is possible for a celiac to be also allergic to gluten as it is a protein component in wheat, barley and rye.

Scott I also have different symptoms than most people. It affects me bad. Stomach ache, headache, nauseous, heart racing, whole body shaking, can't walk then my throat starts to close. It attacks my nervous system. The only thing that saves me is a 1/2 of Xanax...it calms down my nervous system

Scott Adams. I was dealing with a DR that didn't care about me being celiac. I repeatedly told him that I was celiac and is everything gluten-free. He put an acrylic lens from j&j. I called the company to ask about gluten and was told yes that the acrylic they use has gluten....then they back tracked immediately and stopped talking to me. The Dr didn't care that I was having issues. It took me 6 months and a lot of sickness to get it removed.... which can only happen within 6 months. The Dr that took it out said that it was fused and that's why I lost vision. If they would have removed it right away everything would be fine. He put in a silicone one that was gluten-free and I've had no issues at all in the other eye. Do not do acrylic!
