Saltines Or Another Substitute?

I found a toffee recipe I want to make that involves putting a layer of saltines on a baking pan and covering it with toffee. Open Original Shared Link

I thought about using the salted pecan nut thins, but the square shape is pretty important to the candy, because the toffee would just stick to the baking pan otherwise.

Any ideas?

In my opinion, the best tasting gluten-free crackers are Glutino, but those are round.

Glutino makes a Table Cracker that is just like Ener-G's rectangler crackers.

Also Dr Shar's has table crackers and snack crackers that are like Glutino and Ener-G's and they are available in the Gluten Free Mall.

Until recently I have used Glutino, and saw some Dr. Schar crackers and purchased them. They were excellent....the closest to Saltines that you will find in my opinion.

Thanks, all! Will try to track down the Dr Schar ones locally, but if I can't find them I think I'll use the Glutino ritz crackers and just break them in half, etc, to fill up the sheet.

I realize this is late in posting, but in case it might help at all for future use, I agree that Schar is the best. The table crackers are most like saltines but they also have some called "snack crackers" that would work, but they are a little different. If you can't find them locally, vitacost.com carries them.

I have found a recipe for "ritz" crackers, but IMHO it's the butter you add that makes it like Ritz. I think it would work, if you haven't found a cracker. I never though of using it for those bars...which I used to make pre gluten-free. Search it here...I think I saw it on this site.

      Wheat flour is fortified with vitamins in the U.S. as a part of USDA policy. Gluten free facsimile products are not fortified. There is no government mandate for such. When you remove wheat flour by going gluten free, you may be removing a significant source of vitamins.
