Potatoes contain glycoalkaloids that promote leaky gut syndrome. This is where food particles can get into the bloodstream and cause problems in other places. Potatoes in processed foods are often bleached with sulfites to keep the color light. Sulfite sensitivity can occur in Celiac.- additives

I hadn't heard of patatin before. Apparently, it is similar in structure to and cross-reactive with latex. People who react to latex may also react to chitinase, which is found in many vegetables as a defence mechanism against invertebrate pests. Maybe this is what you are reacting to. Hello everyone, this my first time to this website and I need some help. I’m 65 years old and have been living with Celiacs for about 15 years. My doctor has suggested I start taking a probiotic named Integrative Pro-Flora-Concentrae. Has anyone else used this probiotic specifically? If this one isn’t celiac friendly can you recommend another please. Thank you. -

Approximately 10x more people have non-celiac gluten sensitivity than have celiac disease, but there isn’t yet a test for NCGS. If your symptoms go away on a gluten-free diet it would likely signal NCGS.
