Anyone have a gluten-free diet for lowering cholesterol? Are there any diet professionals out there that can suggest a resource to follow? Thanks!

Lentils, beans, apples with skin... all the non-starchy vegetables you can eat. A small amount of nuts. A few eggs (unless you're diabetic, in which case go light on the eggs). Fish, some chicken, a little red meat (grassfed is better). Limited dairy.

Eliminating white carbs and sugar in favor of olive oil and whole grains can generally be useful for bringing bloodwork back into line.

Walt Willet and Mollie Katzen wrote a pretty basic book on diet that might be useful but you would have to adapt from gluten-grains to non-gluten grains for some of the recipes and suggestions. Sound like a good start?

And don't forget the DARK leafy green vegetables as well: Asparagus, spinach, Kale, green beans, broccoli, peas, eggplant, red bell peppers and zucchini.

On the food side, make sure that you get your good fats as well: Extra Virgin Olive Oil, Avocados, etc.

Finally, you should be taking a triple distilled fish oil several times per day. There is tons of research out there that support it's inclusion into your diet.

Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute. If you are interested in summaries of scientific publications on the topic of oats and celiac disease, we have an entire category dedicated to it which is here: https://www.celiac.com/celiac-disease/oats-and-celiac-disease-are-they-gluten-free/
