Tater Tot Casserole Recipe!

Yeah yeah yeah....whole foods, fruits and veggies I know. HA HA! But this one is a quick meal right before we head out to a softball game. Plus my meat and potatoes husband loves it and my kids eat it up. I can't say that for all my meals. : )

Bag of frozen tater tots (double check to make sure gluten-free)

1 pound lean ground beef

1/2 chopped onion (I always buy frozen chopped onion because it's easier and no waste!)

1 can Progresso Creamy Mushroom soup

salt and pepper or seasoning salt

2 cups shredded cheese

crushed potato chips(recipe called for sour cream and onion but I only had Lay's Stax on hand)

Preheat oven to 400. Layer all the tater tots in the bottom of a large casserole dish. Sprinkle with salt and pepper or seasoning salt. Cook meat and onion and drain. Add whole can of Progresso Cream of Mushroom soup. Add cheese a little bit at a time until all mixed in. Pour this over the tater tots. Crumble up the potato chips and put on top. Cook 30-45 minutes or until the chips are lightly browned. Check to make sure the tots are done and serve! Mine was done in 30 min but I used the tater rounds instead of the larger tots. It might take the reg. tots longer. Enjoy!

I have been making tater-tot casserole for many many years. Before I even got sick. Now I do a gluten free version but I use cream of mushroom and cream of chicken soup, but no cheese or chips. Kids loved it before and love the new gluten free version also.

What brand of cream of mushroom soup and cream of chicken do you use now? I never can find any that's gluten-free. Why does Campbell's have to put in wheat? Uggg.

I can not have dairy so I had to come up with another version. And we usually buy Spud Puppies because they are organic. I do mix an onion in with the ground beef and always some canned green beans because my daughter loves those. Sometimes I would put corn in there too. And often some cooked chopped celery. Instead of using a cream soup, I used either come ketchup or tomato sauce but that didn't go over so well. Then I tried beef gravy. Yum!

Mmmm, I love tater tot casserole!

We don't use canned soup any more, we make a quick cream sauce with chicken broth and rice flour.

We also use chicken instead of ground beef, lots of green onions, some canned green chiles and pepper jack cheese.

Our recipe takes cream cheese and some thyme, so it's a little different then this one, but you sure can't go wrong with tater tots (and I say this even though we are a "whole food" kind of family). B)

      Welcome to the forum, @yellowstone! The most common ones seem to be dairy (casein), oats, eggs, soy and corn. "Formed" meat products (because of the "meat glue" used to hold their shape) is a problem for some. But it can be almost anything on an individual basis as your sensitivity to rice proves, since rice is uncommonly a "cross reactor" for celiacs. Some celiacs seem to not do well with any cereal grains.

      What foods can trigger a response in people with gluten sensitivity? I've read that there are foods that, although they don't contain gluten, can cause problems for people with gluten sensitivity because they contain proteins similar to gluten that trigger a response in the body. I've seen that other cereals are included: corn, rice... also chicken, casein. I would like to know what other foods can cause this reaction, and if you have more information on the subject, I would like to know about it. Right now, I react very badly to rice and corn. Thank you.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.
