Per Julia Child, simmer 1/2 cup rice in 4 cups water (or combination of water, milk, stock.) Add 1 or 2 cups sauteed onions. She suggested butter, and suggests you sautee them for 8-10 minutes.

While the rice is cooking, steam the vegetables you want for your soup. (I used brocolli.) Season to taste and serve with a dollup of yogurt or not after pureeing.

That's actually a condensed version of her recipe. She's probably rolling over in her grave, but I was so excited to have cream of broccoli soup that wan't icky and didn't require all that much work. Then I got all excited about making creamed soups for casseroles and stuff. I'll post the actual recipe if you ask...

I found a recipe a while back using potato instead of rice but I think rice would work better flavor wise for some soups. I did a sguash soup using potato and it was good.

      It sounds like you have a very reasonable GI doctor, who diagnosed you based on family history and symptoms after eating gluten. I would consider you lucky! The other option would be to make yourself very sick by doing weeks of a gluten challenge prior to an endoscopy.

      Hi Colleen H,   I suffered with the pins and needles/burning feeling in my legs and feet for at least  6 years until my Nephrologist figured out that I had to go on a low salt diet.  He said my kidneys weren't strong enough to remove the salt.  The simple fix was a diuretic, but that med leaves the uric acid behind, so that wasn't an option.  On the bright side the low salt diet lowered my BP over 20 points and and the pins and needles/burning feeling went away.  Good Luck and hope this helps.

      Yes this is very frustrating for me ... not sure what to think.  Feels like I'm having reactions to a lot of things  Now applesauce?? I don't understand 😞

      I did ... But aren't we going to be vitamin deficienct if we are not eating due to being sick ?? If the food we eat is gluten free and we have other sensitivities , how do we get out of the cycle??  Thank you

      Anyone else get pins and needles. ??? Burning feeling ? Heat makes it so much worse 😔  Winter is here.  I had to lower my thermostat because I couldn't take that hot air feeling 😔  Hopefully it goes away soon
