  1. Sorry I can't explain the ingredients. The only thing I know is that xanthan gum holds things together. This is the mixture I have used with much success! Hope it helps! Amy Cake Flour Mix 3 cups rice flour 1cup potato starch
  2. Blendtec is the same company. They are just changing names. I haven't had mine but for a week, but if you go to Epinoins.com they have some good reviews from people who have had them longer. As soon as mine came it had a crack in it. They have very good customer service and said they would send me a new one right away and to use that one until it arived...
  3. Sorry about that. I had a typing error. I meant to say loud. This grain mill can grind Sorghum (milo). If you can find a place to purchase the whole grain from. The only things I use that I cannot grind is the starches. Amy
  4. Hi, I just decided to grind my own flour. I bought a Blendtec formeraly blendtec Kitchen mill. I'ts wonderful. I have only done rice and quinoa so far. The flours are just as fine as the bulk flour I use to buy. And I'm saving a lot of money. We figured out that it would take a year for it to pay for it's self, but after that, you're saving a lot....
  5. The dough is soft and a little firm on the outside after cooked. I rub Crisco on them and wrap them in a towel after they come out of the oven to keep them soft. This is what I did. Mix together flours, starches and flax meal. Scoop out one cup of mixture. The recipe calls for 4 cups. Add creamer, xanthan gum, sugar, salt and yeast. Blend well and set...
  6. I have not yet tried buns, but I have been succesful making bagels. I am going to try a cinnamon raisin bread and buns this weekend. I'll update when I'm done. Amy

  8. We are orginally from Chicago but now in Wisconsin. So glad about the bears going this year! So, ofcourse we will have aparty. Even if it is just the four of us. We like little smokies wrapped in pizza dough, potato skins, hot wings, homemade chips and anything else I can think of. If you want any tips on these just ask! Amy
  9. Thank you so much for posting that recipe. They were very good. We had to modify them do to other allergies, but we had been looking for something to go with our pizza on pizza night. Our whole house loved them! THanks again! Amy
  10. Thanks! That sounds wonderful.
  11. I have heard that about pineapple, but I think it only applies to fresh.
  12. Hi, just wanted to let you know that my original recipe is with lactaid and Fleischmann's unsalted margarine which is lactose free. Amy
  13. I made it! I used 1 cup water heated it up in a small saucepan with 1 tbsp gelatin. Let the gelatin dissolve then poured it in a glass bowl and added 1 cup pineapple juice (I needed something to do with the juice from a can I opened for the girls). Stirred it up and put it in the fridge. It worked! My daughter loves it! I love that it has no dye to...
  14. This is the recipe we use. My girls and non-Celiac husband love it! If you want to use egg, the original recipe calls for 2. Just omit the flax meal, and Ener-G. Also, you can substitute a dairy free margarine for the Crisco. That's just what we use. Hope you enjoy! Amy Banana Muffins 1
  15. Thank you so much for posting that! I hope to try my own soon.

  19. Hi, My daughter can not have any dye and I want her to be able to have more treats. So I was trying to find recipes to make your own jello and have had no luck. If anyone has any suggestions or information it would be a blessing! Thanks, Amy
  20. Before either of our daughters were diagnosted I made all of our own baby food. Our younger daughter had severe acid reflux that only got worse when she was introduced to solids. We started using infant cereal. I did some research and figured out how to make my own baby cereal and baby foods. If I ran out and had to use jar food or pre-made infant cereal...
  21. Sorry for confusing you. I would add the applesauce along with the egg replacer you used. I find that making 3 cups at a time is much easier. Then use the amount you need. I usually substitue cup for cup with a mixture like that. But that is up to you. Just wanted to clarify for you. Amy
  22. Hi, I have recently decided to grind my own flours. Now here's the problem. What to use!?! There are some many different grain mills. Which one works best? Or do we go the Vita Mix way? Any suggestions from those of you who know from experience is greatly appreciated. Thanks, Amy
  23. Hi, We are eggless bakers and I wanted to share some tips with you. Applesauce is a wonderful binder in egg free cooking along with the egg replacer you used. If you don't want to use a jarred applesauce just cut up an apple and put it in a saucepan with a splash of water and cook then puree. I would add 2-3 tablespoons of applesauce to your recipe. ...
  24. Hi, We are eggless as well. One good eggless option is to use some applesauce as a binder, but you still need another rising agent. Here is an egg replacer recipe. It calls for baking powder, so here is a recipe for corn free baking powder. Hope this is helpful. Amy Egg Replacer 1
  25. When making powder sugar you need to add 1 tbsp of starch per cup of sugar. Blend in after you process the sugar. Sorry I forgot to add that in my last post.
