  2. I haven't browned any roasts or other meats since going gluten-free. Now I want to make some short ribs. All the recipes I see recommend dredging the meat. I'm trying to decide, is it better to dredge the meat in a gluten-free flour, or to forego the dredging? If the former, which one is best? If the latter, what is the best way to brown it? Any help...

All right, so my boyfriend lives in Berlin, and I will be doing some research there beginning soon...there will be lots of travel between the US and Europe in the next few years, with a trip coming up in March. Most european carriers have gluten-free options, but unfortunately Delta does not, and since I live in Atlanta, it's usually the best choice...
  9. Eosinophils are immune cells. As such, if they appear in too-high numbers, they can do so in response to any kind of allergic response (or parasitic responses, too). Eosinophilia is not *strictly* a result of celiac disease. However, it is quite possible for the eosinophils to show up as part of an allergic response to gluten or wheat.

  14. That's very good advice! I don't even use iodized salt, actually, but I do eat seaweed like it's candy. I try to take kelp tablets, but often forget. I will check out the Dr. in Cuming and see what she's about...Cuming is a bit out of the way, but not too far for a good doc! I wonder if there are OTC iodine tests online?

I don't know exactly how it's done; you might need to brown them before laying them in the ramekin to make them crispy...or if you did a large quiche, maybe you could do it in a cast iron skillet that could go right into the oven.   17. Thanks so much for this information. I've had many thyroid tests over the years, but I know I've never had an antibody test. I dread going in to have it done, though...another "You're paranoid!" moment. Fortunately, I do have one Dr. who wants to monitor the nodule that I have. So maybe I'll bring it up with her and see what she has to say.
  18. Oh, wow. I don't believe there's a history of thyroid disease, but certainly of other autoimmune disorders, on both sides (diabetes and MS). The thing is, I had hyper-thyroid. Can that still be caused by an autoimmune attack on the thyroid?

  22. I have the same problem. Legumes are as bad on my system as gluten! And I'm telling you, it was hard to give up the peanut butter. But saying goodbye (well, somewhat....still have some healing) to gas and bloating and heartburn! Toooootally worth it.
