  1. thanks --persistence is really necessary. I found that some people in the hospital (RN & LPN) had no idea what celiac was, others became advocates for me with the pharmacy and doctors while some just stood on the sidelines. Most of our nurses in Honolulu are from the Philippines and having just returned form there helped to develop good relations...
  2. I had a full knee replacement 8 days ago which as you can imagine requires a fair number of meds for pain and what not. In a Kaiser Hospital everything is linked with their clinics so they know I'm celiac and in fact diagnosed that 9 or so years ago. Still I had to make sure what they were giving me was gluten-free. It turned out bot the lasic and a stool...
  3. i see, I wish you luck - whole foods is great for finding these types of things. take care ken
  4. Check Indian and other Asian markets for pure millet too. what was not gluten free about what you did get before?
  5. By law in the US if there is wheat in the mix, it has to say so on the label. Buckwheat is Soba in japan -- juwari soba is 100% but all other which is about 87% of the soba in Japan is mixed with wheat in different percentages. There is no guarantee when a company buys a tn of sobako or buckwheat flour that it is 100% -- it could have very well been mixt...
  6. what does it say on the label or is it blend or cross contamination?
  7. Thanks so much for posting this and warning us about creatinine levels. Goimg to send the info to my Kaiser doc now. Good luck!
  8. head there every time i'm in the Chicago area. great place. Never had a problem . In Skokie Illinois they took me into the gluten free kitchen area once. Well separated.
  9. thanks much -- still out for now but getting a full knee replacement next week. hope you have a great holidays too -- although holidaze is how i usually spell it
  10. I think the red one is a little richer and nuttier type taste. I like them both and have used the red instead of quinoa in other meals as its much smaller and gives a different texture - more like a breakfast cereal
  11. try to find an indian or japanese market -- or one of the superstores which has things form every country. I'm pretty sensitive buyt never had trouble with millets from India or japan. Sorghum is another story. I'll only get that in Japan now. got pretty sick from US ones.
  12. Oh Thanks much! -- They have this wonderful red millet in INdia too. My chef buddy always makes me a care pack of this roti to eat on the plane home.
  13. millets are very common in INdia (Ragi) -- Ragi roti ( kind of flat bread) is very good. In Japan there are millets used instead of rice in some areas and in ancient recipes. Awa, Kibi and Hiya are found in Japanese groceries and also very good. I make them in a rice cooker instead of rice or mill them into a flour. If your in a city that has...
  14. INteresting Scott. At a conference in Japan in 2005 I was told there were only about 2,000 celiacs in Japan. In 2007 it was over 20,000. Have not been to that conference since but children with celiac are now a major concern in areas where wheat is common. In many areas meals are still rice based and not like Tokyo with a bakery in every train station that...
  15. FAIRFIELD, Iowa, Nov. 25, 2013 /PRNewswire/ -- The Institute for Responsible Technology (IRT) released a Open Original Shared Link today proposing a link between genetically modified (GM) foods and gluten-related disorders. In today's report, a team of experts suggests that GM foods may be an important environmental trigger for gluten sensitivity, which is...
  16. thanks for posting Scott, I was made President of the American culinary federation chapter in Hawaii and celiac awareness is part of the program. 12% of the guests in Hawaii have some sort of dietary requirement from celiac to raw food. ALL the Big island major hotels have gluten-free pantries and dedicated kitchen areas now.
  17. unless they changed, I always got the small pieces of dried latex. a little goes a long way so I've not order that in a couple of years. Get a lot of other pickling spices from them too.
  18. Real Asafoetida is a dried latex from a root of a number of plants not at all related to wheat. Having cooked in India at the Taj in Bangalore and cooking INdian at home in Hawaii, I have never seen nor can imagine Asafoetida having gluten. It might just mean finding the real spice and not a powdered imitation or blend. I get my from MVspices.com KEn
  19. Open Original Shared Link
  20. My sweating comes and goes even though i've been gluten free for almost 9 years. It is less than it was before I went gluten-free but it still happens. Now I think its tied into the supplements I take which also might cause frequent urination. It cant hurt you to go gluten-free unless you plan to get certain tests. I also need a endoscopic exam to confirm...
  21. Most of the shiro or white miso is made with rice and not mugi (barley) as long as the label says rice you should be ok. I've had a office iin japan and trained as a chef there 30 years go and never had trouble in the last 9 years as a celiac if the label said rice. In Japan you would have to know how to read the characters for kogi, rice, mugi etc...
  22. great -- glad you found things you could eat.
  23. There are places in Takasaki and Niigata -- i wont get back there until nov 1 but maybe can find them then.
  24. Did you read wheat Belly? I'll try to find the link for the Aussie study saying 14 times the gluten .. Using gmo in this contest was discussed at a conference im at today. Its all semantics. cross pollination can or cant be considered GMO and the letters are used to prove points on either side of that issue. Borlaugs wheats are not transgentic...
