  1. There are a lot of ways of getting into the field but it all starts with education, health, medical, food service and restaurant business. YOU really need to know a little of everything in order to successfully consult in these fields. Goodluck

  3. the eel sauce is basically sweet teriyaki sometimes with rive vinegar or other sauce mixed in. the best sauces are made using raw brown sugar from okinawa. with rice once it s cooked you mix vinegar and sugar to get the taste you like.   5. there are a few gluten-free tortillas on the markets. Maybe your store can get them or check the online mall here. I just found some mini ones today while traveling and visiting a small store. Only corn in them and soft, not hard tacos. also brown rice ones are easy to roll up. good luck

  8. I used the buzz word allergy which is much more of a pay attention trigger than celiac or cant eat.   9. i think it takes some practice to determine the level the knowledge the server and the chef has at each restaurant you visit. Allergy, getting sick and "extremely ill" are phrases they take notice at.   11. there are hundreds of great recipes online form India and some really fun cooking shows. Try check Zee TV and NDTV to work backwards to their shows.   12. I lecture and teach in our culinary school and cannot go into the kitchen for 3 days after the bread class. It is a degree of sensitivity.   13. The one in Skokie Il. north of Chicago was pretty good with an extensive gluten-free menu. They showed me the part of the kitchen that was only for gluten-free prep. It's owned by the same company that owns Outback and Roys.

  17. dont use soy sauce, tell them ahead of time you have celiac. In China I suspect you'll have a lot of plain steamed vegetables and fruit. Have spent 30 years in and out of Japan and China but never on a group tour. The Tour people should work it out for you but you still have to double check at each location. Good luck

  19. i just spent last oct. in the philippines and Nov. in Japan. Have been to japan a few months a year for more than 30 years, 9 of them as celiac.   20. there are a lot of books out there. You might start with looking up saag, alo gobi, palak, dal makani. Also many groceries now carry tasty bites or other Indian microwaveable foods. they are not bad and will give you and idea of spices. good luck
