  2. if you make your own onigiri or get them from a restaurant where they are made fresh it should be ok. in 30 years i have not seen malt vinegar or ever had problems with the vinegar there. usually its all rice vinegar and mirin -- also if you look for a place that has juwari soba -- 100% soba with no wheta, thats something you can enjoy -- just ...
  3. there are a lot of gluten free foods, you just have to becareful at each place that they didnt use shoyu (soy sauce) bring your own braggs or gluten free soy sauce and you can have sushi ( other than the eels and things coated with sauce) . 10. my experience was with terrible GFM and with the flight attendants just dumping the rolls on top too. On domestic first, i just get the set up salad and a glass of wine for the dressing. last year I had great gluten-free meals on Ethiad, Emirates, air India, JAL and Jet airways. All better than any US carrier
  11. should be no problem. the red beans are very sweet in sugar but no soy sauce. -- i never liked the artificial flavors for shaved ice so you might be better off at the whole foods smoothie place. try to get the fresh pineapple at the KCC farmers market and make your own. I htink the new executive chef at the Hilton is Charles Charbeanou. Good...

  13. there are a number of higher end restaurants like 12th Ave. Grill and Town where they wil make gluten-free meals. Town has one or two on the menu but its always good to call first. The Chef owner of 12th ave is Kevin Haney and Town is Ed Kenny. Both will fix you up and have done so for our forum members in the past. Both places are in the kaimuki...
  14. most cashews come from Brazil and India and mass quantities. I've eaten them processed raw and roasted for many years with never any problems.
  15. As Shell 156 said you need to learn some of the words. Ko mugi ko is wheat flour where as ko mugi is wheat. Another way to say no wheat or flour is meriken ko or american powder. Takashi Imai <takashikun.imai@nifty.com> is my old friend there in Yokohama who is a doctor and understnads celiac. Ive had a place in Japan for more than 30 years...

  17. Sorry I had not seen your messages earlier. I'm a former chef and ACF Hawaii president who has had celiac for about 10 years. I work with and advise many of resort chefs in Hawaii where I'm located. At the beginning, there was a vey large learning curve which took some time. Ten years ago less than 1% of the guests had a dietary requirement. Currently each...
  18. I had a lot of allergic reactions to the drugs so it took me about 10 months of rehab but now its back to normal and i trust the fake knee more than the other real one that they want to change soon too. Like the Chicago Cubs, wait till next year is what I keep telling them!
  19. talk to your local university extension office. They should be able to help you develop a grant to apply for through SARE-- USDA Sustainable Agriculture Research & Education -- They have farmer-rancher grants which help small farmers and producers. If your adding local ingredients to your baked goods there may be a way to apply for funding...

  22. My wife has been doing this for about 8 years at our farmers markets on the Big Island in Hawaii. She orders in bulk online and keeps material in professional kitchen storage containers from restaurant supply companies like BArgreen Elligson which is nationwide. She packages in saran type wrap from costco. Each "fruit" bread has a custom label on it and...

  24. The gluten-free meals I've had on American have been ok themselves but the flight attendants have no idea what it is to be celiac and felt sorry for me and dumped a bunch of rolls on top of my dinner. After that I order the fruit plate even in first or business.
