  1. There a few important things to learn -- komugi and allergy -- if you tell that to wait staff that will help. Also bring your own soy sauce with you and plan to eat much sushi as many other dishes use soy sauce and many other restaurants are hard unless you know Japanese. If your staying in western style hotels they wil be able to help you....
  2. my experience was with terrible GFM and with the flight attendants just dumping the rolls on top too. On domestic first, i just get the set up salad and a glass of wine for the dressing. last year I had great gluten-free meals on Ethiad, Emirates, air India, JAL and Jet airways. All better than any US carrier

  4. The gluten-free meals I've had on American have been ok themselves but the flight attendants have no idea what it is to be celiac and felt sorry for me and dumped a bunch of rolls on top of my dinner. After that I order the fruit plate even in first or business.

I also find it hard to believe that spices bought from the lowest bidder in a third world country are fully analyzed by large multinational corporations before becoming part of a product like A1.   6. Had another amazing mail with Chef George At Kamehameha Kona Beach Courtyard Marriott. Chef never ceases to amaze me with his creativity and using local produce.
  7. Just wanted to add to this old thread about a great gluten-free meal at the Kamehameha Kona Beach Marriott. Chef George Gomes did an amazing job for a lunch meeting for me. A lot of gluten-free choices. just call him the day before and prepare for an amazing meal.

Last weekend I at at Town restaurant in Honolulu, http://www.townkaimuki.com/ The chef/owner Ed Kenny fixed me an incredible gluten free vegan plate of fresh veggies.   11. Hi Ken, I was wondering if you could give me some ideas about gluten free eating in Maui. We will be staying in Kihei next week but are willing to drive for good safe food! Also do you know if the shave ice is safe? I am dying to have one but can't find anywhere the ingredients for the syrup! Mahalo!! Laura

  14. Anytime, if you come to the Big Island I can give you the names of the chefs to talk to before hand to make sure you get something special. Lots of great fish here, you just have to be careful they don't dump soy sauce on it! Take care Ken
  15. Its not as had as it seems depending on where you visit. I live on the big island and VP of the chefs group and celiac for 7 years. On the Big Island, 12% of the visitors at the hotels require some special allergy menu now. When I was diagnosed no one knew what celiac was but now all the hotels here have numerous Gluten free options and dedicated areas. ...
  16. There are hundreds of types of kimchee made from many many types of things, not only cabbage. Some have soy sauce added to the chile, some use flour to thicken chile water into a paste. Many don't. You have to check each type carefully or do what someone suggested which is to make your own, it is pretty easy.

  19. HUmmus with the big white lime or fava bean is fairly common and a little sweeter than some with check peas. I love them all!

  22. I've spent a fair amount of time there, often around Myaguez and agricultural areas. Not much in stores so I usually eat a lot of great locally grown fruit. Restaurants in the resorts will usually make gluten-free meals if you let them know in advance. I also love Mafungo and other dishes they make with bananas and garlic but there was one time I lived...

  24. I use cinnamon or dried orange peel at times and grind them with the beans. Since I make my own vanilla extract from the beans we grow, I will occasionally add that to the coffee but really like the dried orange peel flavor the best. You can also oven pan roast your own hazelnuts / filberts or mac nuts and grind those with the beans. Great coffee...
