If the above is not an option how about contacting the local doc that dx her & also an allergist to see if they can make some contacts - wheat is one of the top ten allergies. jason, no it is not true. You can develop "full blown celiac" from untreated gluten intolerance. I know several double DQ1 people personally to disprove that theory. Once diagnosed via blood test & one diagnosed via biopsy. Of course they have been sick their whole life & are in their 50's now. If you want to wait that long & take your chances...

Scotty most people end up with a negative biopsy anyway - get the biopsy if you have to, but I would not eat gluten before hand... You can made the argument about the 22 feet of intestine etc & only a tiny sample - if you do not tell them beforehand they will probably only take 2 samples anyway... & yes it is a shame your endo is so closed minded... -

The definition of celiac which is damaged villi - is too narrow. Some of us have other problems from gluten but if those problems do not kill us first we will develop villi damage. The problem is that we that do not have villi damage as a first symptom are dying of cancer before the villi are damaged. Or we are dying of complications of obesity, asthma... -

Yes to what AliB said - He can be gluten free & should be BUT he should not eat gluten-free pasta & all that junk . Good healthy gluten-free as in meat, veggies, fruits, nuts, seafood... nothing else. Like Jack LaLanne says - if man made it, don't eat it!!!!! -

If he does not give up all dairy & soy he might not get better. That is just like pouring salt on a wound. He needs to be eating a very plain whole foods diet. & the kitchen/house should be completely gluten-free, too much chance of CC if you take gluten foods in there. Yep, just get a new doc - if you need one - but I agree with Ursa just test thru Enterolab & do not make yourself & your son sicker with trying to eat enough gluten to damage yourself so some doctor can tell you that the blood test is negative & no need to restrict your diet... nutty doctors. & sorry the dr was so rude to pull that junk... -

Also, when you took gluten and dairy out of your diet, did you ADD anything to your diet? Like any new gluten-free foods? You really should not add anything new until you are healed. & if you are reacting that badly to dairy you probably cannot handle soy. to sum up, omit all soy & any new foods that you have added to your diet & see how... -

You may not think that you have any symptoms now, but wait, six months is not a long time - & the longer you keep giving your body a little gluten here & there the sooner the "cup is going to run over". ... -

I am a big sweet potato fan - you can fry them like french fries, cut into cottage fries & sprinkle on oil & fresh chopped herbs & bake in the oven. also great baked serve with a touch of brown sugar - no butter necessary. Bake extra sweet potatoes refrigerate leftover ones - next day or two - peel the potato, slice into rounds, put in skillet...
