I'm not seeing where this will cure celiac. I do see where it will cure many food allergies, the ones that manifest in symptoms other than anaphlylaxia. A state-licensed day care is required to take kids with dietary restrictions, and to employ all means necessary to ensure that the child is cared for properly. A child with diabetes is NOT the same as a child with celiac! A celiac child can simply carry meals from home, and eat them in the cafeteria at assigned meal times, just like any other child that carries lunch from home. Exactly what is the school supposed to do to accomodate the child being celiac? The child is in middle school, and is quite capable of taking some responsibility for herself. This sounds like a whole lot of the parents trying to pass responsibility of their daughter's dietary care to the school. Schools are not equipped to take sole responsibility like that. The parents need to make sure the girl gets to bed earlier the night before, and provide her lunch for school. A refrigerator is not needed to store a lunch, she can carry... -
I did flex for a while. I quit worrying about losing weight when I started having health problems, so I haven't actually "dieted" for a while. Weight Watchers is the best plan for me, as it is the only one that accomodates all of my allergies, as well as celiac.

In my baked foods, like cakes and cookies, I use one tablespoon of ground flax mixed into 3 tablespoons of hot water for each egg. It works well for chocolate chip cookies and devil's food cake. My reaction to eggs has always been to get a migraine a couple of hours after eating them. Allergy doc says it is an intestinal reaction, not an allergy. Wow! Talk about a timely topic! I spent the last few days with my head just reeling. It turns out I had glutened myself, and it was part of the reaction I was having. I also get lightheaded and dizzy when the weather changes, it is my body's own reaction to the barometric pressure changing. It is scary, I was afraid to leave the house alone! -

I don't know about what anyone else does, but I take whatever painkiller works when I have a slip-up. If motrin eases your misery, have at it! You might also try antihistamines. It works sometimes for me.

A major part of my problem is that glutenfree flours have more calories than wheat flour. Since I figured out how to make yummy devil's food cake and chocolate chip cookies, I can eat the whole batch. I feel deprived, since I cannot eat whatever I want, so I overeat what I can have. I was fortunate: the doc that did my endoscopy was looking specifically for damage. He said he saw patches that were red and inflamed, so he took the biopsy samples from those patches. It took a few weeks for all of the junk to clear my system, and I am still healing, but I felt SO MUCH BETTER!!! within a month of starting the diet!
