  3. This one I have always liked as wel. My complaint with all gluten free breads aside from taste, texture and cost , is the once opened you have like 5 days to use it. Also the gluten free diet has skyrocketed me into full blown diabetes, which isn’t well controlled and my diabetes does not like gluten free anything , spikes my sugar terribly 😔

I can’t imagine eating that much gluten every day for weeks.   7. Thank you for this great information! I appreciate it. Does gluten build up on a day to day basis? Like if a person consumes 1-2 grams of gluten today and then another 1-2 tomorrow, does that become more like 4 gm of gluten in your body? And so on?

  13. That’s interesting to know only 3 grams of gluten will initiate an immune response . How do you know how many grams of gluten is in a food?
  14. Thank you for sharing. I have been gluten free for quite a while now. My symptoms and rashes and antibodies all improved with a gluten free diet. I go back to my GI doc in six months for blood work, so I can talk to him about some of this then I guess, but my levels weren’t elevated like yours in the beginning so I doubt it will be an option for me

My brain works in weird ways, and I am honestly concerned that if I did not get a positive biopsy, my brain would latch on to that, even while knowing that my GI believes I have it, and I am honestly concerned that I would go back to eating gluten and somehow justify it, regardless...

  20. How many genes are there for celiac? Are there just 2 genes? And do you have to have a gene in order to have celiac?
