So do you eat gluten free replacement foods? My stomach just can’t seem to tolerate all the veggies and sugar free coffee creamers and sugar free replacements etc. eggs are hard on my stomach as is salad and things like that. I don’t think my intestines have healed .. I thought about baby food. I just don’t know anymore. I don’t even know what to eat for... -
I have been insulin resistant for many years. All of the sudden my insulin resistance has become terribly bad and I’m dealing with diabetes that I cannot control. I think eating gluten free replacement foods has contributed to this based on blood sugar measurements after consuming them, so I have basically backed off all breads, crackers, frozen foods etc. ...

I have been trying to keep a food journal. I had a spell like that today. I had eaten bacon and gluten free pizza. I didn’t eat until around lunch. I try to count carbs bc of my sugar issues and I also have central hypothyroidism, ptsd, generalized anxiety disorder, depression, SVT/tachycardia and palpitations, fibromyalgia -

I have recently been having spells where I get extremely sleepy, like can’t hold my eyes open, get shaky and weak. I fall asleep and am like out cold. Thanks. I take vitamin d and am trying to take B1 again. I also take a multi vitamin for immunity support so can you please tell me some examples of what you eat? I keep Asking that but am not having any luck getting responses.. especially breakfast if no eggs or oats and I need protein

I eat a lot of dairy (cheeses and milk) and eggs because of my sugar issues. I do eat gluten-free oatmeal sometimes and I love corn. What are nightshades? Do you toast them or do anything special ? Thanks. I looked at those but I have only been able to find them to purchase online in bulk and as a struggling single mom I just don’t usually have the extra money to buy things in bulk… that’s been a huge issue for me with the gluten free diet

I MISS hotdog and hamburger buns…. I have learned to eat burgers without a bun pretty easily but I like sloppy joes and pizza burgers and other things that really need a hamburger bun. I’m struggling with this diet… I keep screwing up and not double checking foods and labels or ingredients when eating out and such. I love and miss fried pickles, all the gluten-free recipes I have found have bread crumbs/panko crumbs, well that makes them so ridiculously hard that I don’t enjoy them. I wondered about just using gluten-free cornmeal and omitting the breads crumbs but idk. Just wondering if anyone out there had any suggestions, thanks!
