This is the method I use when I travel. You might want to consider checking the ice every couple of hours. You can dump the water in a restroom (on the plane or at the airport) and replace the ice. The flight attendants should be able to provide cup(s) of ice during the flight.

There wasn't much available that was edible in the way of gluten free pastas when I went gluten free 30 years ago. I simply substituted rice for any sauce (like spagetti or a meat sauce) that is usually poured over pasta. -

I live in a gluten limited household. Basically, the only gluten items are cereal, store bought bread products. After many years of sharing the kitchen I removed the gluten items from the kitchen. I have been gluten free for 30 years. My gallbladder problems are related to being female, over 40, and overweight. I do not know if celiac had anything to do with my gall bladder problems. The first symptoms showed up about 7 years ago. -

I went to four doctors when I was told I had to have my gallbladder taken out and did research in the internet. I did not find any viable alternatives to surgery. The four doctors (1 internist, 1 family doctor, 1 Celiac knowegelable GI, and 1 surgeon) I had it out and feel a lot better. No more dibilitating attacks and a lot more energy. One of the points... -
Be very careful where you eat the night before the race. You would not be at your best if you were accidently glutened. You might consider bringing your own food to eat the night before and the morning of the race. Hope everything goes well.

Very interesting discussion. They found the beginning stages of arthritis in my back when they did a cat scan last year. I don't have any pain. Do nightshades always make arthritis worse or only if you are sensitive to nightshades? I have never had any trouble with nightshades in the pase.

Nature Made marks there bottles gluten free. They are available at Costco in large bottles which makes it a lot less expensive than buying them at a health food store. Also, the Kirkland (Costco brand) mutli-vitamins are marked gluten free on the bottle. -

I like to freeze: Spegetti sauce or chili over rice or rice pasta. Cooked chicken, I put it into the refrigerator to defrost a day in advance and eat it cold. This should work with any cooked meat that can be eaten cold. Soups and Stews. -

When I needed a marinade I did an internet seach for "chicken marinade". There are many receipes on the internet to choose from. I ended up with a lemon, olive oil and garlic marinade. Hope you can locate one you like. -
I also hope you get through to you brother. If you have not already done so suggest a gluten free trail run of one or two weeks. I agree, no unsupervised visits right now. Explain that this will continue until you are sure he can be safe. One safe arrangement might be to send all his food if she will agree not to feed him anything else. She would also have to agree to handle and store the food in a safe manner.
