  1. I tend to eat leftovers from dinner the night before. I make double the amount for dinner and package the rest in plastic containers and stick in an insulated lunch bag. If you don't have access to a frig the insulated bags with a small blue ice brick works wonders. Last night I had roasted chicken for dinner. I made up a small salad and sliced some of...
  2. No, you're not crazy. We have probably all been there at some point. I had this dream last night where I sat down at a restaurant and went through every menu item one by one with the chef and I couldn't eat any of it. Some would say that was a nightmare, LOL. In the dream I was terribly depressed because it was always going to be like this and my...
  3. I found this recipe on the Living Without site and it's not bad. I substitute for the potato starch, but overall the flavor balance is good. I roll them out in buckwheat flour just to give them a little nutty taste. These are stickier to roll out than wheat tortillas so you need to make sure you're rolling it out with lots of flour of some kind or it will...
  4. Some of my favorite meals. Amy's gluten free mac and cheese. I sometimes add salsa and hamburger to it, or cut up hot dogs in it. Thai Kitchen's individual serving packets of rice noodles make a great lunch. I add veggies or meat to it sometimes. Stir fry using Thai Kitchen rice noddles with veggies and meat in a simple WF soy sauce and sesame...
  5. LOL. Just goes to show. I have the opposite problem, mine turn out too gooey. WAY too gooey. Not a crumble in site. I'm at 6700 feet so altitude may have something to do with that, I don't know. I have the same problem when I make a flourless chocolate cake. I wind up leaving everything in way longer than the recipe calls for. So maybe if you took...
  6. I am a fan of vodka martinis. I admit it. Love them. But I've given up drinking them, at least for now. Hard liquor seems to be a problem at this point. I don't know why. It's not a gluten reaction for me from grain alcohols so I'm not sure what the problem is, but I'm honoring my body's reaction to hard liquor and staying away from it for awhile. ...
  7. I used to buy their syrup but stopped after I was diagnosed because of the labeling. I seem to remember something called "natural flavorings" or something like that on the label, and I've learned the hard way that secondary ingredients "natural flavors" and "colorings" can be gluten filled, particularly in brown colored liquids. Wheat and barley can be...
  8. I remember making one very blatant mistake early on. I'd bought these Indian rice chips from the organic store. I read the ingredient list and the chips were made purely out of rice. Great. I took them home, opened the bag and ate one. While I was holding the bag munching I read the ingredient list again and realized there were two ingredient lists on...
  9. I sold health and life insurance for a couple years, but I've also been out of it for about four years so take that into consideration With life insurance I don't know that a Celiac Disease diagnosis would be a deal breaker. I'm sure there's a question on the form about whether or not you've been diagnosed with an auto immune disease. Answering yes...
  10. I understand and sympathize. I worry that it won't stop and I'll just keep finding new allergies. Cucumbers make me itch. Potatoes cause stomach problems and aggravate my chronic bronchitis, though other nightshades don't seem to be a problem for me. Corn goes straight through me, though I am going to try organic corn to see if certified organic non...
  11. I think there is an element of control involved for some people when it comes to what they eat and don't eat. No one likes being told what to eat and what not to eat, or how to live or what to believe. Yes, you're married, but he is still an individual with free will who may feel he's having his options taken away from him. I understand that point of view...
  12. I've found that starches work better for thickening gravey than plain rice flour. Though sweet rice flour or glutenous rice flour (which contains no gluten) works fairly well. I usually use potato starch to thicken gravy and soup.
  13. This is totally off the subject, but I've begun to wonder about the food starch/sulfite connection. I react rather violently to corn starch, but not so to some ground corn or corn flours, particularly organic products. At first I assumed it was a corn allergy, but after having minor reactions to other gluten-free baked products with potato starch or dried...
  14. For starters it's a mini horse which means it's not even pony size. Mini's are pretty small, but have a sturdier bone structure than a dog their same height and weight would have. They're not producing tons of poop or urine every day. Small horse, small poop, less urine. The poop from a 125 mini is not going to be any larger than that from a 125 dog....
  15. I used to get the aches quite frequently prior to going gluten-free. Now the severity and frequency have lessened considerably. Ibuprofen was the only thing that ever touched the pain, and even then it only lessened it. I used to get up and go for a walk when it got really bad. For some reason the activity helped. But I recall that some research says...
  16. The biggest problem I had after going gluten-free was simple fat content. Chicken caused some problems. I'm not a big turkey person so I didn't have any through that point. I had to avoid pork completely for the first six months or so or risk the consequences. The skin on chicken in particular is a problem. Now it's rarely a problem for me. I'm careful...
  17. Oh thank the Gods. I thought it was me. Eighteen months? Then I have - pulls out fingers and toes - NO, SEVEN MORE MONTHS? That's a long time. Every time I feel the anxiety or depression I start trying to figure out if I glutened myself somehow. So perhaps that's not the case. With regards to feeling like my pre-Celiac self, I don't think I know...
  18. If you can find Dr Prager frozen fish sticks and fillets, those are quite good. They're breaded with potato flakes and are gluten free. My local organic store started carrying them. Also Amy's makes a gluten free Mac N Cheese that's not bad. She also makes some canned chilli's and soups. I don't know for sure that they're gluten free, but they're worth...
  19. I live in Southern California. Unfortunately it's a bit of a backwoods mentality here. I'm in Big Bear City up in the San Bernardino Mountains. No Celiac friendly restaurants here with the exception of the one sushi place. There is one small organic store that stocks some special gluten-free stuff like soy sauce and Thai Kitchen things, and two grocery...
  20. I've pretty much left all the medicines behind. I occasionally still have a problem if I eat pork or something else with a lot of fat. When I first went gluten free I tried the apple cider but couldn't stomach the smell. Then I used the apple cider pills which worked well, but again they didn't always work all night. Milk sometimes helps me for some reason...
  21. NAH. The hardest part about a gluten free wedding is the cake. The rest is easy. Don't tell the guests and they'd probably never notice there was no bread on the table. Chicken, fish, beef, any meat can be prepared gluten free. Green salads are easy as are fresh vegetables with a nice oil and vinegar dressing. Find the right cateerer and it should be...
  22. I'm guessing it's not much blood or they'd be a little more worked up over it and probably would have used the "B" word by now. If I remember right a reading of blood cells in urine under 300 is considered normal, anything over that raises questions. My highest reading was 2300 I think There are other threads here somewhere where other people have talked...
  23. Oh poop. Just had a bad thought. I moved two and a half years ago. There's a box of display china and "stuff" unopened in the closet. I have no where to display the china so I simply didn't open the box and left it for that magical day when I buy the china cabinet of my dreams. Now you've got me wondering what else is in that box. You know how...
  24. "The risk of breast cancer however, appears to be reduced." I'll take every bit of good news I can squeeze out of this disease. Particularly since that sentance comes right after a particularly grizzly one. That article could scare you silly if you let it. Violet
  25. Hmmm, you gave me an idea. I bought these packaged chocolate "cookie bars" that are gluten free at the Organic store last week. The mouth texture is absolutely TERRIBLE though the taste is good BUT, if I dry them and crumble them I bet they'd be perfect for the crust of a cheesecake. I have this lovely pumpkin cheese cake recipe and a couple small pumpkins...
