  5. Sure sounds like it to me. There's a website called celiaccentral.org that has a quiz on the front page where you check off all the things you've experienced, and then print it out and take it to your doctor. You have a lot of the things on the list, I suggest you take a look at it. And no matter what the test your doctor did says, the best way to find out...

  7. Basically, scratches and ridges are your enemies. Any smooth surface can be rendered safe with enough scrubbing. So cutting boards, anything wooden, anything old that's plastic, and anything scratched is a no-no. That includes those goofy pans with the ridges on the inside.

  10. The best thing to do is something called an elimination diet. Stay off the wheat and 'everything else' for two weeks. Then, add one thing every week, and see what happens.

I haven't tried this yet, although I will, but I would guess that replacing the garbanzo flour with teff flour would give you the color you're looking for, and might be better for people like me who easily detect the presence of bean flour.   16. I would say bread pudding, the not-so-great gluten-free breads typically work very well when turned into stuffing or bread pudding or french toast. And any baking with coconut flour is good because it calls for so very many eggs, so that way you get more protein in your baked goods and that's healthier.

  19. Wow!!! I've only noticed it in the past six months, on and off, my bloody eye wouldn't STOP TWITCHING! It's not visible to tohers, but it's irritating as all get-out. I'll have to try supplementing with magnesium next time it happens, I already take extra B.

  21. I have found the best gluten-free white bread ever, but it's made by a local restaurant and I don't think it's available online. I actually had a piece of soft buttered white bread without having to toast it. Thus far, the best gluten-free frozen bread I've had is the Whole Foods brand. Makes lovely french toast.
