ARCHIVED Entrees You Can Freeze!
sixtytwo replied to ratgirl's topic in Gluten-Free Recipes & Cooking Tips
Weight Watchers and Lean Quisine have a few gluten free items now, all of the allergens are listed on their ingredients and on the WW ones it actually says gluten free. That is the lazy way to have frozen stuff from the freezer when you have not had time to put stuff away for later. I am finding the WW ones handy as I am doing WW online. Barbara -

sixtytwo replied to lemonade's topic in Gluten-Free Foods, Products, Shopping & Medications
OMG................John, you do not know how much I appreciate the link that you offered on Splenda. I have been doctoring for headaches with a neurologist, rhumatologist and now my internal medicine doctor for quite some time now, I will be seeing the internal medicine doctor again tomorrow, and the headaches are better/however still there. I do think... -
When you do go into practice again, you need to let everyone on this blog know. I am sure they would flock to you for treatment if they were anywhere near enough to make it practical to get to you.

The cranberry turkey medallions that I looked at today from Smart Ones were not gluten free, it said right on the box they had wheat in them. -
ARCHIVED Please Help A Beginner With gluten-free Bread Issue.
sixtytwo replied to roxannebb's topic in Gluten-Free Recipes & Cooking Tips
I use Bob's Red Mill Gluten Free Bread Mix all the time and use my Kitchen Aid mixer. I have made tons of batches of it each time with success. Instead of making one large loaf, I make four smaller loaves. I bake them for 20 minutes at 375 and they get nice and brown without having to cover them in the oven like it says on the packaging. It calls for... -
ARCHIVED Walmart Has Gluten-free Section Now
sixtytwo posted a topic in Gluten-Free Foods, Products, Shopping & Medications
When I was at my Walmart yesterday, which is being renovated to look like all the new Walmarts (much to my dismay, I liked it like it was!!!) but now I have to say I will be okay with it, because I discovered there is a whole little gluten-free section with pasta, Pamela's and Bob's Red Mill mixes etc at prices that you will NOT find anywhere else. The gluten... -
ARCHIVED If A Restaurant Doesnt Have A gluten-free Menu
sixtytwo replied to Nicole H.'s topic in Gluten-Free Restaurants
If a restaurant has a char-broiler, you can be pretty sure that your grilled chicken, burger or steak would be safe cooked there, I am. Then you could order a baked potato and a salad with oil and vinegar and be fine. I am sure there are lots of celiacs that have had this dinner a lot. It can be ordered with little fuss and be pretty safe. Just make sure... -
ARCHIVED What Do You Have For Breakfast?
sixtytwo replied to Yoekie's topic in Gluten-Free Recipes & Cooking Tips
Rice chex, cream of buckwheat with sugar and milk, french toast made with my bread that I make myself with Bob's Red Mill mix, waffles made from Pamela's mix and blueberries---major YUM, scarmbles eggs and bacon and fried potatoes, we can eat pretty much like other people, just with a few innovaitons. I think you can make this as hard or as easy as you want... -
My favorite vanilla frosting is: one stick of butter, 8 oz. of cream cheese, a bag of confectioner's sugar, a couple of teaspoons of gluten-free vanilla and milk to make it the consistency you want it. To make chocolate frosting, add real cocoa to it to make it as strong or light as you want it. I love to make cupcakes and have one of those cupcake trees...

ARCHIVED Went To Applebee's Last Night
sixtytwo replied to *lee-lee*'s topic in Gluten-Free Restaurants
When I eat at Applebys I have their salmon withouth the sauce, it comes with a rice pilaf and veggie. It is very good. I also have had their very popular chicken salad that usually comes with fried chicken, but I have them put on their grilled chicken instead. I eat there all the time. I think the dressing probably is thickend with corn starch. I do... -
ARCHIVED Wisconsin Celiacs Unite!
sixtytwo replied to frenchiemama's topic in Introduce Yourself / Share Stuff
It's hard when you live in a remote part of the state like I do............Conover, which is nearly all the way to the UP, by Land O Lakes. Fortunately a couple of the stores up here have Bob's Red Mill products which I like and I make due with cooking gluten-free otherwise. I shop for the other things when I go to Janesville pretty often. Restaurants... -
ARCHIVED What Bread Taste Good?
sixtytwo replied to coltsjen's topic in Gluten-Free Foods, Products, Shopping & Medications
I used Bob's Red Mill regular mix and make two at a time. I use smaller loaf pans so I get four from one mix and end up with eight out of two mixes. Lasts me a long time. It smells so good coming out of the oven and I have never had a flop. I love waffles and the Bob's wasn't all that good. The Pamela's mix was great, a little more work and I put blueberries... -
ARCHIVED Pizza Crust
sixtytwo replied to clinicaloutburst's topic in Gluten-Free Recipes & Cooking Tips
I have good things to say about the Bob's Red Mill pizza crust mix. It is easy to do and make two 12" crusts. Try to find it. I use spaghetti sauce, usually the Walmart kind and then whatever I want on it. It was the best pizza I have ever made in the five years I have been eatng gluten-free. For quick pizza snacks, you can just toast your bread on one... -
ARCHIVED Bad Recipe Or Bad Cook?
sixtytwo replied to QueenOfPain's topic in Gluten-Free Recipes & Cooking Tips
My bread is made from Bob's Red Mill gluten-free Mix, the white one. I make two at a time and use a smaller pans so that I get four little loaves from each one, for a total of 8------and they last me quite some time. I bake them for 20 mintes. I have never had a flop. They are kind of expensive, but I am worth it. It smells so good when it comes from... -
ARCHIVED Just Diagnosed With Mild Celiac Disease
sixtytwo replied to rafi's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
This is three times I have come back to this thread and seen this particular same subject. I can't even believe a real doctor would even say something like this. Bottom line............run, so not walk, to a gastroenterologist (after doing some research into how much the new one knows) this is too important for you to stick with that quack. Remember..... -
ARCHIVED Bread You Can Slice
sixtytwo replied to Dylan's Mom's topic in Gluten-Free Recipes & Cooking Tips
If you have a Whole Foods by you, then you could get already sliced gluten-free bread for your son that is pretty darn good and save you from having to bake all the time. I make my bread from the Bob's Red Mill mix and make two mixes at a time and I love it. Instead of making two big loaves, it makes eight small loaves which last me a long time. My granddaughter... -
You don't have to explain anything, McDonalds does this all the time for LOTS AND LOTS AND LOTS of people. Remember there are lots of people on protein only diets that don't eat the bun either. The fries at most McDonalds are cooked in fryers that are dedicated only to fries, but you must ask at each one you go to for sure. I do it all the time. Also...

ARCHIVED How Long Did It Take You To Heal?
sixtytwo replied to clnewberry1's topic in Coping with Celiac Disease
Gluten intolerant too, going on five years now, my grandaughter has severe celiac disease for nine of her ten years of life. My only advice is not to think you can cheat here and there as YOU CAN'T. I started having lots of migraines and feeling yukky, and it probably was the fact that I though I could just have a little of this or that and get away with... -
ARCHIVED Having A Dinner Party
sixtytwo replied to MollyBeth's topic in Gluten-Free Recipes & Cooking Tips
Although you have found your answer in the turtle cheesecake.............here is something for future. If you like chocolate mint, make some great brownies with one of the brownie mixes, I like Bob's Red Mill, mix in some chocolate chips and then when they come out of the oven, immediately lay on lots of Junior Mints and just let them sit. Do not spread... -
ARCHIVED Looking For Dishes To Take To Get Togethers

How about deviled eggs? Boil your eggs and immediately after they are done, run really cold water on them and peel, then cut lenght wise and mix them with mayo, dry mustard, S&P, and I use some dill relish. I have never been to a deal where the deviled eggs have not all disappeared. Also you could take this: Put a block of cream cheese on a pretty... -
ARCHIVED Rachel Ray Beef And Chicken Stocks Say Gluten Free

ARCHIVED Can Anyone Help My Substitute This Cookie Recipe To Gluten Free
sixtytwo replied to jjdthmpsn's topic in Gluten-Free Recipes & Cooking Tips
Sure.....just use Bob's Red Mill All Purpose Flour for the flour and back off just a little on the amount of flour you use compared to what the recipe says plus use 1 t. xanthun gum for every cup of flour. Xanthun gum looks expensive when you buy it, but it goes a long way. I do this all the time in my favorite recipes. This looks like a recipe with... -
ARCHIVED Questions For All Those Who Have Ever Had Fibromyalgia
sixtytwo replied to nasalady's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I am one of those typical people............thyroid, fibromyalgia, migraines and a gluten intolerance. I should be a case study for some doctor as I have it all. The fibro did get better when I went gluten-free and when I get a flare-up, it lasts a much shorter time now. I now, though, am having a terrible time with migraines and just can't figure out... -

sixtytwo replied to wowzer's topic in Gluten-Free Recipes & Cooking Tips
If she doesn't post the recipe, you can probably go to Paula Deen's site, get the recipe and then sub in some gluten-free flour, I use Bob's Red Mill gluten-free All Purpose Flour.....and I back off a little on the amount of flour I use and add about 1 t. xanthun gum for each cup of flour, works really well.
