  1. Red Bull helps me sharpen my focus but not to the point that I don't know there's still a problem. As far as I can tell, it's one of those things I have to get through. Eating more gluten doesn't help because it only resets the clock for how long it takes to pass.
  2. Celebrity style -- Pooh! These day's, I'm just happy if I can get my cow licks to lay down and not stick up. :-) My hair is getting more cantankerous as I get older. I swear I'm going to chuck it all and get a buzz cut one of these days.
  3. For some early success with gluten-free baking, I'd try some of the mixes. Gluten Free Pantry Favorite Sandwich bread looks and tastes like regular white bread, Pamela's Wheat Free Bread has a good dense taste and texture, Gluten Free Pantry French Bread and Pizza Crust mix makes a good crusty loaf of French bread (when baked in a French bread pan). Bob...
  4. By this bread, do you mean the Bob's Red Mill Hearty Whole Grain Bread? Or the Gluten Free Pantry Favorite Sandwich Bread? I must confess, I've been wondering what kind of loaf I'd get from either one if I divided it in two and baked it in the perforated French bread pan. Seems like the rounded bottom and stretching it out might let it rise more and have...
  5. The more I learn about all that can go wrong with the human body, the more amazed I am at how often it works right. I understand what they say about not absorbing gluten through your skin. But I think we need to consider that when standing in the shower washing your hair, water runs past your face. When washing off a face scrub, you're going to have...
  6. How'd yours turn out? The Bob's Red Mill Hearty Whole Grain Bread Mix has good texture for a grainy, nutty type of bread and it tastes like a rye bread without the fennel seeds (reminds me of Westphalian rye). It rose to almost the height of a normal loaf and at least as tall as regular rye bread would. It sliced easy and holds together well. I think...
  7. Good luck! I predict you will enjoy it. It's the closest thing to regular white bread I've found. When I bake gluten-free, I usually share it around with a co-worker that has Celiac, some to my Mom, sometimes some to a guy at her church with Celiac. Because I can't eat it before it goes stale and I don't want to mess with freezing it. When I first baked...
  8. Chebe bread is from tapioca and it can make some really good rolls, buns, pizza crust even tortillas. Whenever I take them to work, my co-workers wipe them out. There are some good variations on their website www.chebe.com but you can really change up the taste by changing the cheese you use. I found out accidently, it's also good with no cheese. Making...
  9. I remember when I was first diagnosed finding out that Aim toothpaste had gluten in it and it was an "A-hah!" moment. The corners of my mouth had been cracking and splitting and I hadn't thought it could be my toothpaste. I figured it was a side effect of the antihistimines I take. My reaction was "What next?" I recently had a similar reaction to Crest...
  10. I noticed your sig line and it recalled a conversation I had with my Mom where she blithly dismissed something with the comment "Life gives you lemons and you just have to make lemonade." I told her "Yes, but sometimes life gives you cow pies instead and the best you can do is make is a poo-pet." for those that don't know what poo pets are Open Original...
  11. I woke up this morning and realized I probably wasn't as detailed as I should have been for someone doing stir fry for the first time. Perhaps this will help... 12. I showed Hubby how to make fried rice last weekend. It literally is just something you throw together. I'd make a list of what is in the dish she's used to for starters. First, I assemble all of the ingredients because once you get the pan hot, it moves fast. Second, I add ingredients in the order that they need to cook (example: you'll want the onions...
  13. The problem with the fried apples may not be preservatives but with the oil in which they are fried. If they fry gluten containing item like chicken nuggets in the same oil, the oil becomes contaminated with tiny bits of gluten that get stuck to your food.
  14. What were her favorite snacks pre-diagnosis? Maybe we can suggest some look-alikes. I've started checking Amazon for gluten-free items now too. Some of the items are eligible for their "Super Saver Shipping" which means orders over $25 are shipped free. It's not hard to hit $25 when you're looking at gluten-free stuff. 15. When I was diagnosed, my doc gave me a generic letter that said roughly "she has Celiac which requires a lifelong gluten-free diet which means no wheat, rye, barley or oats" and I've used that when traveling, when I have a problem from the insurance company (I won't use generics) and that would be a very handy solution here. But if you were trying to get...
  16. I haven't eaten nearly as much bread as I did pre-diagnosis and I didn't eat that much then (sandwich at lunch usually). Now, most days, I take a gallon ziploc with half a bag of salad greens and another ziploc with a cut up, grilled chicken breast and at lunch I combine the two with dressing and toss in the bag (the reason for the gallon size bag). Other...
  17. Sorry you and your Mom are having to go through this. I was scanning the responses thinking I wouldn't have anything to offer more than what has already been covered, but I remembered something from when I was first diagnosed. They told me the first damage to a Celiac tends to be to the tips of the villi that produce the enzyme that helps us digest dairy...
  18. It seems logical that a woman's immune system would be more complex and more prone to problems. She has to be able to carry multiple fetuses with different tissue/blood types and not have her body reject it as a foreign object. I remember reading that you could find DNA from a woman's children still in her body for many years after giving birth. The article...
  19. Pre-diagnosis, I had no unusual reactions until I developed severe iron anemia and a severe deficiency in B-12 and folic acid. But I didn't realize how bad/tired I felt until I went gluten-free. When I went to my doc for fatigue, she gave me a little speech about how women overextend themselves (true). Since going gluten-free, I have much more energy and...
  20. Natalie, it sounds a second opinion might be a good idea. Some docs still aren't up to date on all the symptoms and effects of Celiac.
  21. I'm not in the LA area but a pediatric gastroenterologist from Children's Hospital Las Angeles came to speak to our Celiac group and she was awesome! Below is the link to her page and the hospital website. Open Original Shared Link Or you might want to contact the local Celiacs and ask them for suggestions.. 22. It sounds strange to say but there actually is a grieving process because so much of our social interaction is centered around food and it seems like everything you used to not have to think about suddenly requires research and analysis. It does get better. Planning ahead makes a big difference because at first, there's a panic like "There's nothing I can...
  23. Please post your results back here along with the name of the cones and mix. It sounds like a fun thing to take to a summer get together.
  24. I like what Dr. Michelle Pietzak said when she spoke to our Celiac group "It is true that if you never test an Asian or an African-American or a Latino for Celiac, you will never find an Asian or an African-American or a Latino with Celiac". One man in our Celiac group from Pakistan said his doc tested him 3 times before the doctor would believe the test...
  25. Have you made these before? I haven't tried it, but I've learned the hard way to do my experiments when the results are not required for a special occasion. I'd be interested to hear how they turn out. You might have good luck transporting them by turning over a box top, cover it with foil or plastic wrap and cut Xs in it to make holes that you could...
