I made that recently for my Celiac group using GFP French bread made in my french bread pan. It was crispy-crunchy and vanished like the wind. The combo of the GFP French bread and the french bread pan makes a MAJOR difference in texture. So much so that a co-worker asked me to make her a couple of loaves for a dinner party she was having (with a Celiac...

ARCHIVED Still Not Better
Karen B. replied to Worriedwife's topic in Parents, Friends and Loved Ones of Celiacs
Have you checked for a local Celiac group? They might know a more supportive GI doc in a nearby town? https://www.celiac.com/st_main.html?p_catid...-41107060117.a6 Two things come to my mind... 1. I take turmeric and fish oil every day for achy joints and it's made a big difference for me. I've been able to stop taking aspirin since I started this... -
ARCHIVED Corn Tortilla Chips
Karen B. replied to radgirl's topic in Gluten-Free Foods, Products, Shopping & Medications
I had to stop eating at my favorite Mexican Food restaurant because they decided to become more authentic and fry all of their taco shells, toastada shells and chips. I was half way through my order of carnitas tostadas before I noticed the difference in the shell. Made me soooo sick. -
That may be why Red Bull helps me where coffee or colas don't. It has B vitamins, taurine and inositol. I'm in no way saying it's a health food :-) But it helps me focus when I've had a gluten hit or even just picked up a bug. I don't really like the taste (usually mix it with orange juice) and most of the time, I drink coffee instead. But...

ARCHIVED Question For Those Familiar With Whole Foods
Karen B. replied to Byte Me's topic in Gluten-Free Foods, Products, Shopping & Medications
No, we tried the Amy's brown rice pizza crusts and didn't think much of them but the Amy's rice crust cheese pizza has a good crust and it is gluten-free. We buy those and build another pizza on top. Add more mozzarella, pepperoni, mushrooms, onions, etc. The only pizza crust I like as well is Chebe but the Amy's is ready faster so I keep a few around... -
ARCHIVED Question For Those Familiar With Whole Foods
Karen B. replied to Byte Me's topic in Gluten-Free Foods, Products, Shopping & Medications
My favorite things at Whole Foods that I can't find anywhere else... All in the freezer section... Amy's rice crust pizza gluten-free chicken nuggets gluten-free fish sticks gluten-free corn dogs and a variety of gluten-free mixes and every flavor of Lara bars and a killer deli counter with dishes that list EVERY ingredient so I can tell if I can... -
I don't know a cure but Red Bull helps me focus.

ARCHIVED Gluten Sensitivity Passed Off As Sinus Infection?
Karen B. replied to Daniebella's topic in Parents, Friends and Loved Ones of Celiacs
A co-worker that has Celiac had recurrent sinus problems and has had 13 sinus operations before her doc found out she has Celiac. She hasn't had sinus problems since going gluten-free but you don't want to ask her what she thinks about it taking her doc so long to figure out the problem. -
ARCHIVED Are Blue Diamond Nut-thins Safe?
Karen B. replied to bakinghomesteader's topic in Gluten-Free Foods, Products, Shopping & Medications
I tend to be very sensitive to cross contamination but I eat Almond Nut-Thins all the time and haven't had a problem. But in a pinch, I've used plain potato chips, tortilla chips or Fritos as a cracker. I've also pressed Chebe dough very thin in my tortilla press and made crackers. Have you ever tried the tip I got from the Gluten Free Bible to sprinkle... -
ARCHIVED Newbie: Whole Foods Bread
Karen B. replied to skurry's topic in Gluten-Free Foods, Products, Shopping & Medications
That's true for almost all gluten-free breads and bread products. The only exceptions I've found have been Pamela's wheat free bread and Chebe bread. They are good heated, but they didn't need heating to be good. BTW, our local Whole Foods doesn't carry much in the way of Glutino products. Each store has a different buyer so they don't all carry the... -
ARCHIVED Newbie: Whole Foods Bread
Karen B. replied to skurry's topic in Gluten-Free Foods, Products, Shopping & Medications
Their sun-dried tomato garlic bread is better but since I tried baking bread fresh from a GFP bread mix, I haven't bought bread. It's so much better straight out of the oven. -
ARCHIVED My Doctor Says I Dont Have Celiac Disease
Karen B. replied to whattodo's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Only being back on gluten a week could yield a false negative... How long must gluten be taken for the serological tests to be meaningful? Our recommendation is to ingest at least 0.3 g/kg/day of gluten for two months prior to the serological tests. However, if somebody experiences symptoms during the gluten challenge we recommend to perform serological... -
ARCHIVED It's Hitting Me...
Karen B. replied to bakinghomesteader's topic in Coping with Celiac Disease
If you can find a local Celiac Support group and get your hubby to go to a meeting with you, it might make a difference. He'll see a room full of people that take it very seriously and he'll probably meet a few that have experienced what it is like to not be diagnosed early. And it might give him a chance to speak with some spouses that have had experience... -
I came home tonight to find the following in my inbox... ----- Many of you are aware that we have been running a promotion at Glutenfreeda.com for the past few months offering 90 days free access to all services on our on-line gluten-free cooking magazine. Due to the overwhelming success of this promotion we have made a decision to make Glutenfreeda...

ARCHIVED Odds Of New Baby Having Celiac?
Karen B. replied to holdthegluten's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
When Dr. Michelle M. Pietzak spoke to our Celiac group, she mentioned that when you feed an infant wheat is critical to the odds of whether or not they will develop Celiac. Unfortunately, since I have no children, I wasn't paying much attention. I just remember it caught my attention because my Mom had told me that the pediatrician had her start all of... -
I think after the lawsuit on the fries, they must be in CYA mode. Now, they post all the ingredients and let you decide if it's gluten-free. The list at the link below is from 5-23-07. Open Original Shared Link

ARCHIVED Needing Apple Cinnamon Anything Recipes...
Karen B. replied to Guhlia's topic in Gluten-Free Recipes & Cooking Tips
My favorite Apple Cinnamon thing is Spiced Apple Raisin instant hot quinoa from AltiPlano Gold. Just got in a new shipment and I ordered the variety pak because it's cheaper but Hubby and I both dive for the Spiced Apple Raisin flavor first. Open Original Shared Link I usually chop up an apple and microwave it to add to the cereal or add a handful... -
ARCHIVED Good Price On Boxes Of Lara Bars
Karen B. replied to GeoffCJ's topic in Gluten-Free Foods, Products, Shopping & Medications
I wish I could buy the sampler box they've sent to our local Celiac group several times. The sample sizes are about the size of the small Butterfingers and Three Musketeers. Perfect for a lunch goodie and an assortment of all their flavors. I tried the Lemon Bar flavor this week for the first time. Didn't think I'd like it but it was really yummy. ... -
ARCHIVED Tasty Bite gluten-free Ready Made Foods
Karen B. replied to jesscarmel's topic in Gluten-Free Foods, Products, Shopping & Medications
I use them like a Hamburger Helper type of item. They are great by themselves, but really handy for a quick meal. Kashmir Spinach + mozzarella cheese = a great dip with tortilla chips add a grilled chicken breast chopped into chunks and serve over rice for a great dinner entree Punjab Eggplant + cooked hamburger or ground turkey + rice or macaroni... -

ARCHIVED Kissing Question
Karen B. replied to whattodo's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
When I was first diagnosed, my hubby was sneaky and didn't tell me he was keeping track of whether or not I had tummy trouble and whether or not he had brushed his teeth after eating his raisin bran before giving my a morning kiss (before I left for work). After 2 weeks when he showed me the results, it was surprising. Every day he had kissed me after eating... -
My Mom is 74 and she was diagnosed a couple of years ago. Her doc didn't want to run the tests because he said she didn't have symptoms (she was having muscle cramps). He was surprised when it came back negative. He is a modern doc in his 40s in a modern medical facility in a major city and he's about as informed as most doctors are on Celiac. Sadly...

I've had the experience of a non-stick coated pan that I kept getting a mild tummy upset from, so I gave it away. I didn't want to believe that it would be a problem but it was for me. But I think we're talking about 2 different types of pans. The kind with a Teflon, Silverstone or other kind of non-stick coating gets scratched and is porous. The...

ARCHIVED Bread Without Yeast
Karen B. replied to whattodo's topic in Gluten-Free Recipes & Cooking Tips
Chebe bread is yeast free (www.chebe.com) and quite tasty. Search this website for recent discussions and recipe variations for chebe. You can obtain a variety of results by changing the type of cheese you use -- parmesan makes a good deli cheese roll, cream cheese makes a mild flavor roll somewhat like white bread. One note -- Chebe is tapioca flour... -
ARCHIVED Family Doctor Not Acting On Results
Karen B. replied to Josina's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
The next step I'd take, if I were you, is finding a local supprt group because they could recommend a doctor that is knowledgeable about Celiac issues and will listen to you. They'll also be a great source of information about what to expect, where the best sources are locally for gluten-free food and supprt for where you are now. https://www.celiac.com...
