  1. Are you taking an ice chest? Or even a little 6-pack cooler? You can put a cup of ice in a zip lock bag to keep a small cooler cold. If it's a road trip, there shouldn't be a problem with stopping at a grocery store and hitting a deli counter for some Boars Head Meat. The Honey Roasted turkey is good. I frequently take lunchmeat and crackers (Nut Thins...
  2. Silk is what Hubby and I both drink. It's more nutritious than regular cow's milk and tastes as good (or better). I'm not dairy intolerent, I just like it better. The chocolate tastes great but most of the time we just buy the plain. I can make chocolate milk if I want it. And yes, the carton says it's gluten free.
  3. This may be a dumb question but they weren't grilled near the buns, were they? I've run into that problem before.
  4. Good advice except for one problem -- I never have time to bake until the sun goes down. :-)
  5. When I was first diagnosed, I got stuck on the other side of town, was very hungry, didn't know what I could have and I was so frustrated I was almost in tears. The amount of infomation you have to absorb at first is so overwhelming. (it gets better) Then, I remembered being told about how McDonalds had re-tooled their line to eliminate the possibility...
  6. My favorite eating place is a Chinese restaurant that uses no MSG in their food. I can't have anything with their soy sauce in it, but I love curry and their curry sauce is gluten-free. If you don't like spicy foods, the basic white sauce at Chinese restaurants is also gluten-free (usually). Steamed chicken (or shrimp) and vegatables and plain white rice...
  7. I thought of this last night when I was baking GFP French Bread. I had a French Bread pan and 4 sprinform pans filled for buns. The buns were in the usual spot and rose just fine. The bread evidently didn't get enough warmth because they didn't rise much at all (about one inch tall). The difference? Hubby talked me into putting the french bread pan in...
  8. At first, you are better off eating fresh foods you prepare yourself. But I hit spots where I was away from home and had to find something to eat. It's better to be prepared, take a lunch, stash some Lara bars. One trick I use now when traveling (by car) is to stop by a Kroger deli counter and order a 1/4 lb. of Boars Head and pick up some fresh fruit...
  9. My hubby said I should also post the recipe I use for scones but it's not really a recipe. Just prepare the plain (red package) Chebe and add the baking powder but forget to add the cheese. It turns out kind of like biscuits but a little different. The result of making Chebe at 11 PM. :-) When I'm deliberately making breakfast pastries, I'll add a...
  10. That's what I usually do with the pizza, add more stuff. Amy's may be vegatarian, but I like pepperoni. :-)
  11. I don't have kids but I keep hearing about all the schools doing away with junk food and emphasizing healthier choices. You might want to point out that for children with diabetes or obesity problems, it would be good to offer healthier snack options like fresh fruit slices, jello cups (sugar-free or regular)or grilled chicken nuggets -- all of these should...
  12. I think I'd call the dentist ahead of time and find out what they use and manufacturer info. When I asked my dentist the first time, they were clueless.
  13. I'll second the comment about needing to turn it while it's rising. I let mine rise on top of the stove but I do turn it half way through the rising time. One thing I do that may help... I bake my bread in the loaf pan on an Air Bake cookie sheet (in the middle of the sheet). It keeps the bottom of the loaf from burning but it would also help spread...
  14. After posting the recipes for snowballs (do nut holes), white bread rolls and cheese straws, I have to say my favorite chebe recipe is still the plain chebe mix made with parmesan and adding the baking powder. It reminds me of Schlotsky's bread and makes great ham and cheese mini sandwiches for lunch (with a stoneground mustard... YUM). And it's the fastest...
  15. The next time I make these, I'm doubling the chilis but then, I'm a pepper head. ___________________________________________ Chebe Cheese Straws (lower choleserol version) 1 package Chebe bread mix 2 Tbsp. Benecol (a healthy butter substitute) 2 Eggland
  16. And here's the recipe I made for white bread rolls. I like the GFP Favorite Sandwich Bread mix for dinner rolls, but my sister can't have yeast so I made these. They were quite a hit. Again, I'm leaving in all the tips I gave my Celiac group. Sorry if it's TMI. _____________________ Chebe Bread - Plain White Rolls 1 package Chebe bread mix 2 Tbsp...
  17. Here's the recipe I shared with my local Celiac group. I made a double recipe of powdered sugar donut holes and didn't have any leftovers to take home. I'm leaving in all the tips about handling Chebe dough because it is a different critter from most doughs. I don't know how long it takes for them to go stale because around our house, it's like finding...
  18. I subscribe to Gluten Free Living Open Original Shared Link (although they've lately had more advertising than articles) Living Without Open Original Shared Link GlutenFreeda Open Original Shared Link (I was snared by their free trial offer) Clan Thompson's FREE newsletter Open Original Shared Link and I periodically check places for...
  19. Curious. I eat Amy's all the time and I've never had a problem. I really enjoy the cheese enchiladas, black bean enchiladas, lasgna and mac-n-cheese. Their pizza is great too. I haven't tried the Indian food yet but I've never had a gluten problem with any of the items listed. I eat Amy's at least 2-3 times a week. My favorite quick dinner for Hubby...
  20. Low iron could be due to the Celiac. Anemia is one of the primary symptoms.
  21. I bake them and line my colander with a flour sack towel, when the rolls are cool enough to handle, I put them in the colander and cover with the ends of the towel. I leave them sitting in the microwave overnight because one of the cats loves Chebe rolls. After they have aired 12-18 hours, I put them in a ziploc and if we're not going to finish them in...
  22. Ditto here and they had a sale on red peppers so I tried adding grilled red peppers to the sandwich... YUM!
  23. I learned something interesting from a doctor that has Celiac that attended our Celiac group. She said the aspirin can inhibit weight loss in some people. I'd taken aspirin for arthritis since my 20s but I was able to switch to taking fish oil and turmeric. The switch has finally seen some weight come off slowly in bits. But I've also made some basic...
  24. A woman I work with was diagnosed as Celiac after 13 sinus surgeries. Needless to say, she's a bit miffed that it took that long for the doc to figure it out. Since she went gluten-free, no more sinus surgeries. I think they have only begun to discover a few of the many ways gluten intolerance can cause the body to go wonky. (wonky: complex medical...
  25. I've also found something in the freezer section at a regulary grocery store called "pan de yucca" that was frozen rolls made out of tapioca flour/starch, milk and eggs. Although not labeled "gluten-free" it was gluten-free just by the recipe. I can only find it at the Kroger on the ritzier side of town (the one that also has more speciality foods). They...
