ARCHIVED I Finally Got The Scope Results
Karen B. replied to num1habsfan's topic in Related Issues & Disorders
The crazy part is that if you've been gluten-free, the test for Celiac won't work anyway. It's like trying to test a diabetic on a low-carb diet for their reaction to carbs. He should know that. -
You may already know this but artificial sweetners (especialy aspartame, Nutrasweet) and MSG are two of the leading causes of migraines. I have Celiac but gluten doesn't give me a migraine (fortunately! brain fog and D are enough). Aspartame is my migraine trigger. What amazes me is how many people think nothing of it and act like you're nuts for...

ARCHIVED How Many Of You Have Already Had Bone Fractures?
Karen B. replied to mamabear's topic in Related Issues & Disorders
LOL! I asked my ortho doc about bone strength after the break on my wrist and he said that most people that trip will try to catch themselves by throwing their arm out and the wrist can snap even when the bone is good. My bone tested fine in my wrists, apparently Colles fracture is not uncommon. I keep saying I want to take one of those classes that... -
You may be able to get them to fix your rice pasta and top it with something gluten-free. just make sure to tell them to use fresh water. Apparently, it's common to have one huge pot of boiling water in which all pasta is cooked. Obviously, that won't work for gluten-free. It may take a little longer for your order since they have to bring the water up...

ARCHIVED So Frustrated With School
Karen B. replied to Nic's topic in Parents, Friends and Loved Ones of Celiacs
And with watermelon slices comes the next competitive event -- seed spitting. If the teachers have enough grace to accept the inevitable, it can be a lot of fun for the kids. -

It's important for all women to take calcium (but you need magnesium and D to absorb calcium). We get used looking at everything through a Celiac filter but non-Celiacs get osteoporosis too. A woman's body uses calcium to help regulate estrogen when going through perimenopause and menopause. My PC doc says every woman should take around 2000 milligrams... -
ARCHIVED Questions From A Celiac Newbie
Karen B. replied to Lins's topic in Coping with Celiac Disease
Have you tried the Alti Plano Gold instant hot quinoa cereals? I tried a box of Apple Raisin that I picked up at a local health food store and Hubby and I both liked it so much that we ordered a bunch, including a variety pack. I gave some to my Mom to try and we combined our orders this weekend to get free shipping. I like having an instant cereal available... -
ARCHIVED Whole Foods Bakery
Karen B. replied to JennyC's topic in Gluten-Free Foods, Products, Shopping & Medications
If you're in Texas, look in the freezer case. They had the baked goods sitting out at first but they kept spoiling too quickly. All of the Whole Foods I've been to (4 so far) have had a freezer section for their gluten-free Bakery goods. -
ARCHIVED Pediatrician & Gi Specialist In Greater La Area?
Karen B. replied to sewwbennion's topic in Doctors
Yes, she's the one that came to speak to our local Celiac group when I was first diagnosed and she is great. Very good communicator and really explains things well. But I thought they would surely have other docs that could help you too. Local Celiac groups are full of valuable info about the best docs, the best places to get stuff and just getting together... -
The link to the McDonald's gluten-free list is: Open Original Shared Link Very handy to keep in the car.

I know you couldn't get this in 3 days but it might be good to keep this on hand for future emergencies. Minute Hamburger Bun Mix Starter Kit by Fast & Fresh Open Original Shared Link .com/Minute-Hamburger-Bun...m=AFAIFIFJKNYD4 I've tried it and it's a good bun from mix to microwave in less than 5 minutes. I toast mine after the microwave just...

One note on Chick-fil-A, last time I checked every meat item on their menu has MSG (it's in the fries too). If MSG isn't an issue, no problem. But it has been an issue for me. My info may be outdated, it's been a couple of years since I checked last.

ARCHIVED Hebrew National Hotdogs?
Karen B. replied to ebrbetty's topic in Gluten-Free Foods, Products, Shopping & Medications
I will say I've never had a problem with the regular franks, the dinner franks or the reduced fat franks but spices don't bother me. I don't eat them as often as I would like because they are loaded with fat and salt. Even the reduced fat franks are not what I'd call "health food" :-) But they sure are good! -
ARCHIVED Daughter, 9, Just Diagnosed...
Karen B. replied to buffettbride's topic in Parents, Friends and Loved Ones of Celiacs
I'm 47 and when I was 11, I became very ill and didn't get better until major steroids and a few years passed. I wasn't diagnosed with celiac disease until 2003 when I had a major health crisis. I spoke about my experience with a pediatrician that is a member of our local group (he has Celiac) and he said something I took to heart. This is the best time... -

I've never had the Cocoa Pebbles but EnviroKids Koala Crisps are a good sub for Cocoa Krispies and best yet, I can pick them up at my regular Kroger without having to make a trip across town for Whole Foods. They make a lot of good gluten-free products but make sure it is gluten-free because they also make regular stuff. Open Original Shared Link -
ARCHIVED How Long Does It Take To Bake Good Bread?
Karen B. replied to a topic in Parents, Friends and Loved Ones of Celiacs
I usually use Chebe or GFP French Bread and Pizza Crust Mix. But that looks interesting. Especially the sauce. I found out awhile ago that a good pizza sauce can be a good sauce for many things other than pizza. Thanks! So being from Ireland, any news on when we'll get a gluten-free Guiness? <grin> Seriously, Redbridge comes the closest to... -
ARCHIVED Bread For The First Time Since gluten-free!

My sister loves it because she can't have yeast. They make great travel rolls too. -
ARCHIVED Bread For The First Time Since gluten-free!
Karen B. replied to a topic in Gluten-Free Foods, Products, Shopping & Medications
You must have missed the Chebe topic the other day... Open Original Shared Link I won't start raving about it again but this is one of my favorite products. I'd make it even if I weren't Celiac. It's so versatile. -
ARCHIVED Storing Freshly Baked Bread
Karen B. replied to holdthegluten's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I let my bread cool completely, slice about half of the loaf up, put that in ziplocs and share it with some other Celiacs (my Mom, a guy at her church, a co-worker) and hubby and I eat the rest. I usually have a few slices frozen for reserve but generally it sits on the counter for a couple or three days. After that, it becomes croutons, bread crumbs or... -
ARCHIVED How Long Does It Take To Bake Good Bread?
Karen B. replied to a topic in Parents, Friends and Loved Ones of Celiacs
I haven't bought frozen bread since finding out how much better a mix is when made fresh. It's cheaper, tastes better and the mix makes enough to share around. My one exception is Amy's Rice Crust pizza. I can make a better crust with a mix and some time, but it's nice to be able to just pop it in the oven when I'm in a hurry. -
I know quinoa is very versitile but my favorite way to eat it is as a hot cereal. Open Original Shared Link Although the Whole Foods deli counter has some really great recipes that I've tried. You may want to check out their recipes... Open Original Shared Link

ARCHIVED Gluten Free & Going To The Dentist
Karen B. replied to LittleZoe's topic in Coping with Celiac Disease
I know at the time of my diagnosis (in 2003) AIM toothpaste had gluten in it. I use plain Crest cavity protection and it's gluten-free but I tried one of the newer types of Crest (Pro-Health and Sensitive) and they broke my mouth out. So apparently, even though Crest says it's gluten-free, something bothers my system. Doing a Google search, I found this... -
ARCHIVED Hebrew National Hotdogs?
Karen B. replied to ebrbetty's topic in Gluten-Free Foods, Products, Shopping & Medications
Keeping in mind that they are kosher and "answer to a higher authority" makes it less likely they would be hiding anything in the ingredient list too. I've had much better success at identifying gluten in kosher food ingredients. Now, I admit my knowledge about keeping kosher is limited, but I know people that do worry about it and they check out ingredients... -
You may want to check with a local Celiac group and see if the restaurant has been reviewed by one of the members. Our group has an eating out event that goes to different restaurants as a group and a review by members that is published periodically in our newsletter. Whatever your decision, isn't it great to have a forum to toss it around in? I always...

ARCHIVED Questions From A Celiac Newbie
Karen B. replied to Lins's topic in Coping with Celiac Disease
A broken arm doesn't heal right away, a burn doesn't heal right away, why should a damaged gut and immune system be magical? Just because you can make yourself sick with a single meal, it doesn't follow that you can make yourself well with a single meal. Healing always takes more time than getting hurt. My sister has had a wheat allergy for at least...
