  1. Thanks! That's also the answer I received back from the folks at King Arthur Flour Baker's Catalogue. I'm going to try it on my next bake and see how it does. Might be more consistent than using the top of the oven. I'm always baking something in the oven while the bread is rising or I'd try the tip of heating the oven and turning it off.
  2. I make the regular GFP Favorite Sandwich Bread mix in my oven in a loaf pan and it turns out so consistently great that I got bored and went on to other mixes. I have nothing but admiration for you guys that can do the bread from scratch. I'm working up to it. :-)
  3. You probably don't even have to say it. Have you checked with your local Celiac group to see if there is a ROCK group in your area? Or have you considered starting one? (Raising Our Celiac Kids) Local Celiac Disease Support Groups/Chapters https://www.celiac.com/st_prod.html?p_prodi...-49107235539.b0 When I was diagnosed a few years ago, the hardest...
  4. Whole Foods is my Go-To place for a lot of stuff I can't mail order (like Amy's cheese enchiladas) and where I've tried several gluten-free products. But some of the stuff I want, they don't carry. For instance, they stopped carrying Authentic Foods products, don't carry much Ener-G and no Chebe at all. But I love their Deli Counter!!! If anyone had...
  5. I found The Gluten Free Bible by Jax Peters Lowell very informative. However, it's full of product lists that are out of date. Any gluten-free product list will be out of date the day after it's produced. It's the nature of the beast. But the book was good about covering ALL aspects of a gluten-free life (like dating) and it's conversational tone was...
  6. I don't have diabetes, just Celiac, but I had no GI symptoms at diagnosis, just severe iron anemia and a severe shortage of B vitamins and folic acid. When they ran the tests, they were looking for colon cancer. You don't have to have GI symptoms to have Celiac. Testing for Celiac can produce false negatives but no false positives. If the test says you...
  7. I have experienced that although at the time, I figured it was carpel tunnel because my job has a lot of keyboarding. Since the Celiac diagnosis, I haven't experienced it so I suspect it was peripheral neuropathy. But I never went to the doc about it.
  8. Hey Bob, that Crepe recipe looks like something I'll have to try! Here's the Chickpea Socca recipe from The Gluten-Free Bible as promised: 1 Cup chickpea Flour 1 cup water 1/4 cup olive oil 1 tbsp salt Mix all four ingredients and pour into a hot crepe pan, tilting to coat pan in an even layer. Cook on one side until golden brown. (For thicker...
  9. Chebe makes awesome pizza crust, great little mini-deli rolls and really good cheese sticks (among other things). Check their website for recipes. There are some tricks to cooking chebe, do a search on this website or PM me if you want more details. It's a mainstay of mine and something I'd cook even if I weren't Celiac. I like to make mini-pizza crusts...
  10. Not if you follow her instructions. Sigh! You might want to contact your nearest Celiac group for a referral to nutritionist that has at least a clue about gluten-free. List of Local Celiac Disease Support Groups/Chapters https://www.celiac.com/st_prod.html?p_prodi...-22107227363.04
  11. The mantra of the Gluten Free is "Always read the label." But many mainstream products are gluten-free. Hormel Gluten-Free Products Open Original Shared Link Classico pasta sauce is gluten-free. Open Original Shared Link Newman's Own has a list online Open Original Shared Link If you have a Whole Foods Market near you, you can check to see...
  12. I agree, Pamela's my favorite. But doesn't it have brown rice flour? I'm at work or I'd check. Sometimes, like with Namaste, by the time they get through telling me what all it doesn't have in it, I'm wondering "Okay, what do you put in that bag?" :-)
  13. There was a recipe for chickpea socca in The Gluten Free Bible that I made and it was like a pancake minus the sugar (which would be easy to remedy). I'll look it up when I get home.
  14. Sam's rotisserie chicken in my area lists wheat on the label. It's probably in the seasoning rub. And yes, I remember it did taste good in my pre-diagnosis days.
  15. Speaking as a Celiac, I think the greatest thing my hubby has ever done for me was deciding to make the entire house gluten-free. In the beginning, when I was still learning, we noticed that sometimes I would start the morning fine but have an upset tummy by 10 AM even though I had a gluten-free breakfast. Hubby thought it might be his raisin bran, I thought...
  16. Hubby (non-Celiac) agrees with me that Mi-Del is good. Hubby says it tastes just like Oreos. I agree. Of course, they need to be fresh. The 2 year old pack we found squirrelled away wasn't so hot. :-) I've been planning on making an oreo cheesecake for my Sis's BD.
  17. Welcome, it really does get easier. You may find this list handy... Hormel Listing of Gluten Free Products Open Original Shared Link And if there are favorite foods you can't have, speak up. There's probably a gluten-free substitute.
  18. Have you tried AltiPlano Gold instant quinoa? It's one of my favorite gluten-free products. Open Original Shared Link It's great for traveling because it only needs hot water (like instant oatmeal) and it has 5 gr of fiber/serving. Of course, if you just like the looks you get with your Panda Puffs and your business suit... <grin>
  19. Nan, I had sciatica due to a severe lack of folic acid and B vitamins. My hematologist told me you have to have folic and B for your nerves to repair themselves. A sub-lingual B/folic supplement helped speed my healing. Also, I later found out that taking Prevacid for 5+ years before diagnosis probably contributed to my shortage because stomach acid is...
  20. Totally agree with that statement. One of the handy things about this place is the info sharing that goes on about things that affect Celiacs other than Celiac... permanent dairy intolerance, various allergies, soy intolerance and so forth. These are not Celiac issues but we discuss them all the time. The only thing I truly object to is disparaging...
  21. I must admit I've never seen the issue with cast iron skillets posted in an "official" site. I just noticed the effect when I used that pan and someone on the Celiac newsgroup mentioned burning it out to carbonize the gluten and re-seasoning the pan. Since cast iron is so durable, I figured what did I have to lose by trying it. It worked for me. Good...
  22. I have to agree that it does get better. The problem is your world gets turned upside down exactly at the time when you feel like crud and your brain is fried from gluten. They told me it would take 6 months for my iron levels to return to normal but it happened in 3 (thanks to some good tips from the hematologist). The sciatica went away within about...
  23. Personal choice is not a "compulsion" and it is offensive to imply that it is. Defending your right not to use products that cause you problems when you are called "paranoid" is not being defensive. If a Celiac experiences problems with a product it is a Celiac's problem even if the problem is not specifically Celiac. The nice thing about this place is...
  24. Another member of our local group told me he thickens his gumbo with cooking okra down. If you find you can't hadnle gluten-free flours just yet, that's another option. Also, if you like spicy, you might try Tasty Bites. They have some good Indian meals in a pouch. They were a mainstay of mine when I first went gluten-free. Didn't have time to do a...
  25. My hubby drove me nuts when we first went shopping together. I swear he took 10 minutes to decide which can of corn! I told him "It's a can of corn, not a life commitment. For Pete's sake, it'll be fertilizer in a couple of days, just grab a can!" We've been married over 20 years so obviously, we got over it. :-) Celiac shopping has taught me patience...
