    ARCHIVED Chuy's Tex-mex

I used to love eating at Chuy's but I haven't tried it since the Celiac diagniosis. Thanks for the info, I'll give them a try!
  2. Thanks for the hint. I didn't see any uncooked portions but I'll try 10 seconds longer next time. Actually, 200 calories for a piece of cake isn't bad. I don't expect cake to be nutritious (although this was enriched). For 200 calories, I can cut calories elsewhere to adjust around it. For me, the best thing is not being stuck with a bunch of cake...
  3. I'm quite a fan of Chebe. It's easy and has a great texture. If you check out their website, they have a bunch of recipes for variations. www.chebe.com I get a wide variety of flavors by simply varying the cheese I use and I accidently found out that if you forget the cheese altogether, it makes a pretty good scone like breakfast pastry! I've posted...
  4. My optometrist was telling me about the great results he had with advice he received from one of his doc buddies for increasing fiber and lowering cholesterol. 1 Tbsp of whole flax seed, freshly ground and stirred into a serving of yogurt at least once a day. We had a small coffee grinder we didn't use anymore so Hubby and I bought some whole flax seed...
  5. I've never noticed a vinegar smell. I wonder how long the package was on the shelf before you bought it?

    ARCHIVED Thirst

If you do have to take iron, the hematologist that treated me for anemia told me to get carbonyl iron instead of iron sulfate. I did and I didn't experience the constiapation issues several of my co-works have when taking iron. And she also told me to take it with citrus or pineapple juice to increase the uptake of the iron. It must have worked because...
  7. That's a scream! Thanks for the laugh!
  8. Have you tried Amy's frozen rice crust cheese pizza? We buy it and add additional ingredients on top. Usually just pepperoni and extra cheese but sometimes we really pile it on. It cooks better on a perforated pizza pan but it really is good. Another option is making Chebe pizza crust up ahead of time and freezing it until you need it. That's worked...
  9. Ditto. There's someone that posts that they like it so maybe I'm doing something wrong. It always comes out gummy and sticks in my teeth. Tinkyada never gives me a problem.
  10. Your doc performed an incomplete endoscopy. Unless he takes biopsies from your small intestine, he can't find Celiac. Was this a gastroenterologist? And, unfortunately, I think you're right. Without changing docs, you probably aren't going to have a thorough endoscopy performed. You might want to contact your nearest Celiac group for the name of...
  11. I just tried another Fast and Fresh product, the Dairy-Free Minute Chocolate Cake Mix. I bought it from Amazon with a gift cert I received for my BD. I can't get the links to work so go to Amazon and search on Dairy-Free Minute Chocolate Cake Mix if you want to see the product. It made a nice light fluffy piece of chocolate cake by dumping the contents...
  12. Before I was diagnosed, I went to ER because my lower back hurt so badly. They diagnosed sciaticia and severe anemia. They suspected colon cancer and instead it was Celiac. (Celiac was great news!!!) After the Celiac diagnosis, they said they thought the sciaticia was brought on by a severe B vitamin and folic acid deficiency that kept my nerves from repairing...
  13. Gotta love the internet -- check out this site... Flour Storage Guide Open Original Shared Link It lists all flours, not just gluten-free flours but it has details like
  14. Just a question, if Tinkyada is turning out mushy and slimy, are you sure you're cooking it with enough water and not overcooking it? I've served it to non-Celiacs tossed with just a bit of EVOO and parmesan and they didn't know it was gluten-free. But I've never had it turn out slimy. Mushy, yes, one time when I lost track of how long I was cooking it...
  15. I found that taking my husband to the support group meetings has been a great way for him to learn how serious it is, talk with the spouses of other Celiacs and become informed about other issues I have to deal with. Do you have a local support group? This is a big adjustment for you but also for him (not as big but still an adjustment). When you're...
  16. Speaking as a Celiac that was overweight at diagnosis, I can agree with everything you've said including how docs are reluctant to test an obese patient for Celiac. I could only get my Mom's doc to test her after I said I'd pay for the test if it came back negative. My own endoscopy and colonoscopy was because they thought I had colon cancer. I think...
  17. I've been taking one 500 mg. tablet of Turmeric each morning and night (2/day) for several months now and I can promise you I haven't turned orange (my hubby would have said something, I'm sure of it :-) Using Turmeric and fish oil, I have been able to stop taking 1000 mg of Ecotrin (aspirin) for the first time in 10+years. The flax seed oil I take may...
  18. Another vote for Tinkyada! I like the taste of Ancient Harvest Quinoa pasta but it's not like "regular" pasta -- more like whole wheat pasta. For classic Italian dishes, soups (where you don't want it to fall apart) and cassaroles (where you don't want it to meld into a pasta bar) use Tinkyada. I've tried all the other pastas I could find at Whole...
  19. Negative test results don't mean you don't have Celiac. How often must a negative test be repeated in suspect individuals? https://www.celiac.com/st_prod.html?p_prodi...-38107460193.0d How long must gluten be taken for the serological tests to be meaningful? https://www.celiac.com/st_prod.html?p_prodi...-09107034209.18 Also, one reason it takes...
  20. You just made me realize there's no emoticon for "blushing". :-) Thank you. We pay forward the help we've received to the new Celiacs. The first year after my diagnosis, I tried to go gluten-free with just reading and it was much harder than it had to be. You get more dynamic information by discussing the diet with people that are doing it. Going...
  21. These won't break on you Ice Cream Cone Dishes & Spoons Open Original Shared Link P.S. they had the best sounding recipe up on their website that could easily be made gluten-free (sub gluten-free flour for 2 Tbsp regular flour): (correction in italics added after closer reading)
  22. Original Chebe bread has no yeast and they also have a mix that has no dairy. Open Original Shared Link Original mix -- INGREDIENTS: Manioc (tapioca) flour, modified manioc starch (100% manioc), dry milk, salt. All Purpose mix -- INGREDIENTS: Manioc (tapioca) flour, modified manioc starch (100% manioc), iodine-free salt, cream of tartar, sodium bicarbonate...
  23. The last time, I used a Fast & Fresh burger bun that I make up fresh. Their mixes come with a plastic mold and you mix up one bun at a time and microwave it, then toast it. Since then, I've tried their pizza crust and and I think next time, I'm going to try wrapping a dog in the burger bun dough made in the pizza crust mold (it's a square about 5x...
  24. Wendy's is great for gluten-free. My other favorite fast food place is Taco Cabana but I don't think you have those in Ohio. Taco Bell is not to be trusted. When you go to the store many regular groceries are gluten-free. Always check the labels. I've found the same brand of canned beans on the shelf, one can has gluten and the other doesn't. I find...
  25. I'm a biopsy diagnosed Celaic but my Sis can't eat enough wheat to test positive due to a wheat allergy. That doesn't mean she doesn't have it any more than a diabetic that's tested without consuming glucose doesn't have diabetes. Something you might want to read before assuming people with negative results don't have Celiac: False Negative Serological...
