Thanks for the hint. I didn't see any uncooked portions but I'll try 10 seconds longer next time. Actually, 200 calories for a piece of cake isn't bad. I don't expect cake to be nutritious (although this was enriched). For 200 calories, I can cut calories elsewhere to adjust around it. If you do have to take iron, the hematologist that treated me for anemia told me to get carbonyl iron instead of iron sulfate. I did and I didn't experience the constiapation issues several of my co-works have when taking iron. And she also told me to take it with citrus or pineapple juice to increase the uptake of the iron. Have you tried Amy's frozen rice crust cheese pizza? We buy it and add additional ingredients on top. Usually just pepperoni and extra cheese but sometimes we really pile it on. It cooks better on a perforated pizza pan but it really is good. Another option is making Chebe pizza crust up ahead of time and freezing it until you need it. That's worked... -

Your doc performed an incomplete endoscopy. Unless he takes biopsies from your small intestine, he can't find Celiac. Was this a gastroenterologist? And, unfortunately, I think you're right. Wendy's is great for gluten-free. My other favorite fast food place is Taco Cabana but I don't think you have those in Ohio. Taco Bell is not to be trusted.
