ARCHIVED Great *not*
Karen B. replied to Kottemamman's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
May I suggest that after you calm down from the urge to choke someone (or at least that's my reaction, not to gluten but to stupidity) you compose a letter to the restaurant. Detail the efforts you went through, the date and time you were there and the results. Then follow that up with the sentence "If this had been a severe food allergy instead of... -
ARCHIVED Fatigue Is Back With A Vengeance
Karen B. replied to Lisa's topic in Coping with Celiac Disease
Before my Celiac diagnosis, I had this problem and read somewhere that kelp would halp it. I started taking kelp supplements and it did help. All kelp supplements do is provide iodine for your thyroid. However, my thyroid always tests normal. Since going gluten-free, I haven't had this problem and don't have to take kelp. I can only assume that I'm... -
ARCHIVED Early Introduction To Gluten ! !
Karen B. replied to irish daveyboy's topic in Parents, Friends and Loved Ones of Celiacs
My Mom says that the pediatrician told her to start all of us on cereal added to our milk at 1-1/2 to 2 months old because it helps babies sleep through the night. My Mom is Celiac, my sis and I have Celiac (although she can't eat enough wheat to test positive). My brother will never be tested unless it's against his will (yes, a wee bit of attitude there... -

Great idea on the lunchables. I take Nut-Thins and Boarshead turkey and cheese sometimes for lunch. -
ARCHIVED How Do You Handle The Food At Your Support Group/rock Events?
Karen B. replied to cruelshoes's topic in Introduce Yourself / Share Stuff
A rule at our Celiac group is that all home prepared food on the table has to have at least 2 copies of the recipe (more is better so people can grab a copy). One copy goes to the group leader who collects them for a handout and one copy stays with the dish so everyone can see what's in it. And I have caught newbies out in mistakes like a crab dip using... -

I wonder how he would react to crunchy bread sticks made with Chebe bread? I made some for our Celiac group and I noticed the kids seems to like them. I used the red package, parmesan cheese and added 1/4 tsp of cayanne to give it just a hint of zip. I've made pizza sticks by adding oregano and sun dried tomatoes. Just make the Chebe bread (red package... -
ARCHIVED Can Someone Please Calm My Mind?
Karen B. replied to lorka150's topic in Coping with Celiac Disease
A post on another thread reminded me of something that helped me to heal about 25 years ago. A medical issue resolved but left me with hemorrhoids. A friend told me to drink a Tbsp of mineral oil in 6 oz of orange juice every day (the orange juice keeps the mineral oil from being too nasty). This helped keep things going more smoothly until I got my system... -
ARCHIVED Celiac Diease And Obesity
Karen B. replied to Lolabell's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I really wouldn't consider a gastric bypass. My sis had one and had so many complications that they had to reverse it. Catch is when the bypass is done, your body adapts by increasing the absorbtive surface in the tissue left behind so when they reconnected everything, she put the weight back on even though she was eating a low cal diet under her doc's... -
ARCHIVED Anyone Else Have A Problem With Constipation?
Karen B. replied to marlene57's topic in Coping with Celiac Disease
Until you posted this I had forgotten about using 1 Tbsp of mineral oil in 6 oz of OJ every day to help with constipation and hemorrhoids. This was about 25 years ago and it (no pun intended) smoothed things out until my system normalized. That took about a year. It had no side effects that I noticed except making things much easier and it was very gentle... -

Just FYI, I've been diagnosed since 4Q03 but it wasn't until the last 12 months that the scales started easing down. I've been eating lots of veggies and salads all along. I make high fiber muffins from Namaste Spice Cake mix for a morning treat with coffee (sometimes I leave the water out and make cookies instead). I trained myself off of sodas and now... -
ARCHIVED My Step Dad Just Diagnosed
Karen B. replied to BRUMI1968's topic in Dermatitis Herpetiformis
You can tell him that potatos, rice and corn are okay. If he's used to grabbing cheap food to go for a quick meal, give him gluten-free menus for a few places. You know all the basics about a new toaster, colander etc. And after he's craving some old favorites to the point of chewing his fingernails, I'd take him to Davinci's to show him why some... -
ARCHIVED gluten-free Food At Restaurants
Karen B. replied to Franceen's topic in Gluten-Free Restaurants
One suggestion I just realized I don't remember seeing is you might want to squirrel away a package of Tinkyada pasta in case you guys go to the Olive Garden (and some other Italian places will do it too). I remember someone at my local group saying that they were able to get them to prepare the pasta for them and they could eat out with everyone else. ... -
Not a problem. I was trying to find a site that explained what I tend to do on auto-pilot. I have a hard time making myself follow almost any recipe without adding cheese, spice or something. Hubby says if I make something really, really good, the hardest thing is knowing he'll never get that same dish again. :-) I had forgotten until this came up...

For some dishes, they would have a very firm texture. But I eat those dishes with chosticks, not a fork. :-) I'd get a pack and play around with a bit at a time until you get comfortable with it. Most of this stuff is just repetition until it's as familiar as what you grew up working with. My first batch of Chebe came out of the oven great and... -
ARCHIVED gluten-free Food At Restaurants

No offense at all. I posted upstream that I almost bought some Sesame Teriyaki RiceXpress without looking at the label just because I trust the Lundberg name and YOW! it has wheat in it. I should have expected that because of the Teriyaki but I'm used to Lundberg being safe. I haven't bought the Beef flavor because when I first looked at it, the label... -
ARCHIVED Wanted: Recipes For Beer Cheese Soup And Beer Battered Onion Rings And Fish
Karen B. replied to sparkles's topic in Gluten-Free Recipes & Cooking Tips
If you don't mind me piggybacking on your beery topic -- anyone made a gluten-free beer bread yet to go with the beer cheese soup? -
I don't generally go by a recipe, I just play around adding what sounds good at the time. Kind of like grits. (cheese? always a good idea... fresh basil, sage and garlic chives? yes! they're in season...) Unless I'm using the polenta in the tube. Then, my favorite flavor is basil/garlic and I like it sliced and fried in olive oil until crispy....

ARCHIVED Celiac Diease And Obesity
Karen B. replied to Lolabell's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Yes, you can be overweight and Celiac. I was overweight at the time my Celiac was diagnosed by biopsy. I was so deficient in iron, folic acid and B vitamins that they had told me they thought it was colon cancer. Celiac was the good news. My weight has gradually been going down with a normal diet so long as I stay gluten-free and get lots of fiber. The... -

Don't know if this would help you but I posted my favorite muffin recipe made with Namaste Spice Cake Mix here: Open Original Shared Link I added all the extra carrots, walnuts and flax seed because I wanted a healthy amount of fiber in the muffin. Funny thing is I tend to lose weight in dribs and drabs when I eat these muffins but when I stop eating... -
ARCHIVED Chebe No-frills Mix?
Karen B. replied to cruelshoes's topic in Gluten-Free Recipes & Cooking Tips
Buying Chebe in bulk is a great idea! I didn't know it came that way. I have several of the plain red Chebe packages on hand but I'm not going to be able to bake until later tonight or maybe tomorrow morning. When I do, I'll measure one of the red packages and post the measurement of mix in the package and the directions. How are you planning... -

ARCHIVED Please Recommend Kid-friendly Nutritious gluten-free Cereal
Karen B. replied to JennyC's topic in Parents, Friends and Loved Ones of Celiacs
If they have Whole Foods Bakery gluten-free muffins, it should be in the same section with the bread. That's where they are in the various WF in our area. Health Warning: The sat. fats on many of the WF Bakery items are very high. A cherry streusal muffin is 6 grams of saturated fat, blueberry is only 1 gram, an almond scone is 12 grams. I can make... -

One bonus to check for with Amazon, some of the items are eligible for free shipping if you order more than $25 and you don't pay sales tax on it (at least not in my state). I can get Pamela's and GFP mixes much cheaper on Amazon than at Whole Foods. Same for Lundberg RiceXpress (I use like a quickie gluten-free hamburger helper). For some reason, Namaste... -
