You could use these for soft taco's. They are very easy and fast to make and yummy! If eating gluten causes you that much pain, then it probably isn't worth putting yourself through tourture just to get tests done. I don't think 1 week would be long enough for the antibody levels to drop too much, but I'm no doctor so maybe it is. I think you definately have issues with gluten though based on your symptoms. -

Welcome, How long were you on the diet before you got the blood test done? Sometimes being on the diet can give false negative results. Personally, I think that you may have a wheat allergy, gluten intolerance, or possibly celiac disease. You can get blood tests and skin prick tests for wheat allergy. Yes! We love to meet new people, you don't have to have celiac to post here! Was this bloodwork for celiac? If so can you remember which tests you had? It seems like you have trouble absorbing certain vitamins so it is possible that you may have celiac disease. I think that you definatley have gluten intolerance due to the results of enterolab. Many people go about it different ways. Some people get the blood tests, others biopsy, some do the dietary challenge, and many do a combination or all of the different tests. Like the others said, being wheat free before the blood test may have resulted in false negative results. Even a person with celiac disease will get a negative result on those tests after being gluten free for a while. I guess the important question here is, Were you eating lots of barely, rye, or oats? I used to have plugged sinuses almost all the time before I went gluten free. Now that I am gluten-free, I've noticed a major difference, I can breath clear most of the time, unless I'm around dogs and cats or dust I am almost postive I have read that sinus trouble is a symptom of celiac disease. *I have read that milk can also cause sinus problems... -

If I were in this situation I would eat before I went... when I got there I would secretly scan the available foods... if there was a veggie tray or fruit tray or a safe salad I would go for it. I also cook my own fries at home. I got nasty reactions from MacDonalds fries every time I eat them and they were cooked in a separate fryer. Go figure

I would ask your doctor for a lactose intolerance or casien intolerance test. A lot of people have problems with milk, I personally get very bad reactions from it. I don't think the gluten-free diet would hurt you... your body is obviously upset at something... maybe you are still healing, maybe you have other intolerances, maybe you have a virus or bacterial...

Some suggestions: French fries, watermelon, Lays Stax (don't get these if he is lactose/dairy intolerant), tuna salad sandwiches, peanut butter sandwiches (toast the gluten-free bread first), cookies, brownies... All gluten free of course
