    Personally, I can't stand Bob's Red Mill Mixes. I only like their pancake mix. Other than that, I think all bean flours are DIGSUSTING!!!! I can't stand the taste of them.     One more thing, I was totally symptomatic before I went to Celiac Camp. It turns out I got a bite (we thought was a bug) and the site of the bite was so bad, we almost went to the ER. This was about 6-7 years ago. I looked at pictures of Lyme/tick bites and it looked exactly the same. So I would say stress triggered it for me. Kassandra

    Casein is a name for all forms of dairy. Whey IS a form of dairy so you shouldn't have it if you're casein free. Kassandra

    This is a difficult, personal choice. If I was in charge of my house (I'm only 17! ) I would make it gluten free. I wouldn't make it free of everything else I can't have because dairy is a lot easier to clean up than gluten for example. I think that there are so many healthier options than the glutenous foods that kids eat these days. I think it is also important...

    Carla, Well, my ferritin was less than zero in March. Then I had iron IV's and ferritin went up to 130. Then 6 weeks later it was down to 40, but that is when I went on a gluten-free diet.     Thank you for the link. My thyroid: TSH 0.50 (0.34-5.60) T3 Uptake 34.8 (32.48.4) Total T4 8.11 (4.50-14.00) FTI 7.06 (4.90-13.13) The only one that is a little low is the TSH.     My ferritin is high compared to what it used to be. It was less than 0 before I was gluten-free. But apparently I am still really anemic. The strange thing is that my Hemoglobin is fine.     So I researched thyroid problems as I have been gaining weight without changes to my diet, exercise (or lack thereof ) and I took a quiz that says I probably have an under active thyroid. Is this something that could be Lyme related? Or is this separate? OR could it just be symptoms that are related to Lyme and not really thyroid? Kassandra

    Hello, I live in LA and fly out of LAX quite often. I can't think of anything that is specifically gluten-free. If you get a salad and bring your own dressing or just use lemon and olive oil you should be fine. I don't know if you have ever been to LAX before, but it's a pretty crummy airport (IMO).     I haven't been to PV, but I eat Mexican food all the time. I agree with the dining card. I go to Mexican restaurants all the time and even with all my food intolerances, it is actually one of the only cuisines I can eat safely. As long as you get corn tortillas and make sure the chicken, etc. isn't marinated in something with gluten, it is easy. Kassandra

    I am going in front of a panel tomorrow with my mom to get a 504 plan. We are trying to find info that explains celiac disease in an understandable way because the panel will not have any medical professionals, so we don't want to scare them!
