  1. You shouldn't have any problem with protein, there are lots of good sources of protein and wheat is not a good source of it to begin with. You do have to become a bit of a label reader. Although wheat is required by the FDA to be listed barley often hides under 'natural flavors' but the list of reliable gluten labeling companies should help with that...
  2. If you are already gluten-free you can't be tested, you need to be on a full gluten diet again for at least a couple of months for the tests to have any chance of being accurate. It seems however that your body is telling you the answer. Is there any way you can find a different job? Breathing in flour dust would cause a reaction.

  8. You might want to try taking some sublingual B12 and see if that helps. Many of us need to supplement especially in the beginning. If you are low in B12 the nerves don't fire correctly. If it continues after a short time on the B12 do get it checked out by your doctor.

  16. You have to stay on gluten until the biopsy, however if you had eliminated gluten and then your symptoms become severe again after you added it back in that is also diagnostic. The choice of whether to continue on the gluten is your choice. With a postive blood test and a reaction to adding gluten back in that is pretty diagnostic in itself.

  24. You may want to see if they carry 'Country Life' brand. They are free of all the allergens. I have been taking them for 6 years now with no gluten issues.
