I do understand that the ratio is going to remain the same. My issue is that if you are consuming multiple servings at 20 ppm that the total amount is going to add up. If you are get 20ppm from one food and 20 ppm from another food, and 20 ppm from another food etc those 20 ppm are going to add up in your system. The food is going to stay at the same ratio... -

Yes we ran into that unfortunately. I am afraid I am not going to be much help as we ended up moving him home and we ended up having to cover the remainer of the lease. For some of us the gluten reaction is delayed. Look at not just what you had right before you got ill but also for the 3 days before. It can sometimes be very hard to figure out what 'got' us especially early on. -

You might want to check into some of the Thai Kitchen items. They have noodle bowls and dinners that you just add meat and veggies to that he might like. Any of their gluten free items are marked as gluten free. The safest BBQ chicken wings would be ones you make yourself. The test would tell you whether you are making antibodies to gluten. If you are making antibodies to a substance that is because your body considers it to be toxic to you. That sounds like Enterolab testing. Many here have had it done and found it to be a good tool in the diagnosis process. It is not considered to be diagnostic of celiac by most physicans. It can however tell you if you are making antibodies and can also be done for soy, casien, egg and yeast. I didn't use it to see about gluten but I did do testing 5 years... -

Rule for Addition of Fractions When adding fractions, you must make sure that the fractions being added have the same denominator. Then, simply add the numerators of the fractions. Thus if I have 5 servings of a food that has a 20pmm it would be : 20/1mil + 20/1mil + 20/1mil + 20/1mil +20/1mil = 100/1mil or 100ppm -

Yes that can still be celiac or sensitivity. Just sensitivity is not any less serious. I would be considered by many doctors as 'just sensitive'. If you take a look at my sig how serious 'just sensitivity' can be is evident. -

Don't be surprised if he wants to scope both ends. If this is case you could always tell him that if a couple months on the diet doesn't help that you will be back. We can have other conditions going on other than just celiac disease and if relief isn't found soon with the diet do keep looking for any other issues that may be present. -

As far as I understand it some feel celiac causes autoimmune issues whereas gluten sensitivity doesn't. Some consider that if you don't have full villi destruction your 'just' sensitive. To get the best possible result you need to be consuming gluten for about 3 months. It is best to do a regular full gluten diet. There is still even then a chance of a false negative. If you become very ill during the 3 month challenge that is diagnostic in itself. -

It is nice to see that they are doing worldwide standards and we are not going to have things like 200ppm in one country and 20ppm in another. I do so hope though that they also require that labels have clearly listed gluten ingredients even if the gluten has been 'processed' out. Just to throw another idea in there- Have you tried eliminating anything other than gluten? For me soy just seems to shut stuff right down. That may not be the issue with you but if you are a fan of products with soy you might want to try avoiding them for a bit a see if it helps. -

Has your wife been evaluated by an allergist? She may have an allergy as well as celiac. That said it is not uncommon for celiacs to react to inhaled flour dust. There are many of us who have had relief from asthma with the gluten free diet. -
If the cutting boards are wood you need to replace them. The colander also should be replaced. There isn't any quide that I know of but if you post that as a topic many will reply and tell you what safegaurds you need to take. If you have only been gluten free for 4 days it could be any number of things that could have 'got' you. Have you deglutened your kitchen? Are you using nonstick pans that may be scratched or a cutting board or wooden utensils that have been used for gluten. You did a stir fry with noodles, was that a new colander? It can be hard sometimes to pinpoint...
