I remember the days of thinking a loaf of bread for $2.99 was expensive--for "the good stuff". I shell out $4.95 a loaf for two *tiny* Udi's loaves a week. Good golly, that's insane. -

I second Easy Off. We used it to de-gluten our grill, one of the few items we didn't all-out replace when we went gluten-free. Make sure you clean the outside (not with easy off), also, because gluteny hands may have touched there, too. -

Our local Costco had a MAJOR Udi's display last weekend and it was ALL gluten free. My daughter was SO happy she could get a sample of something at Costco for once. We stocked up! -

Your best bet would be the Stapleton Location. From City Park, take 17th St. (or 23rd, depending on which side of City Park) east to Quebec. Turn left on Quebec and go to 29th St. Turn right on 29th and you're there. Will take all of 10 minutes to get there. There's parking on the street or behind the buildings (it's a shopette complex). We actually ate at an UDI's restaurant last night. They do serve gluten there, but hubby and daughter had no trouble with their gluten-free meals. You can even get a gluten-free panini sandwich. It's not a chain, but a franchise in Colorado in Arizona, but Ling and Louie's has an AMAZING gluten free menu. The service is crappy and slow, but the food is amazing (imagine breaded/fried sweet and sour chicken, YUM). Hubby and daughter have both eaten there several times and haven't gotten sick. Chili's is off our list now because they changed from the "original sauce" which was safe to a sauce that now has beer in it. They have removed ribs from the gluten-free menu altogether. What was so great about Chilis is that my daughter's fave meal pre-Celiac was from Chilis and it was awesome to not have to take away that from her too. Grrrrrrr. Bad Chilis...

I love flylady.net. I am afraid of providing too much structure for her that college will be extraordinarily difficult. I do wish I could help figure out what she needs to ask me though! A gluten free kitchen is WAY easier, IMO, especially when cooking for a whole family. My daughter and husband are Celiac so it's a lot nicer for them to know that anything in the house is "safe." We've definitely been able to "get by" and find some tricks. For example, my husband and I have essentially taken over teaching her math this year (including purchasing the teachers version of her math curriculum) because her teacher is so outrageously awful and boring that it's a lost cause. I second that response..my daughters ttg was at 98 just prior to diagnosis. They actually did the blood test after biopsy to confirm, but said had they done the blood test first, it was an almost certain diagnosis even without the endoscopy.

It's really something to work on with your doctor, but I'd talk to him/her about possibly trying the gluten-free diet first, before trying the medication. I would DEFINITELY consider that approach if I were in your shoes, but the mom in me would want to know if not treating the UC w/ meds while you try the gluten-free diet would have any down-sides. My daughter had constant throat and sinus infections pre-diagnosis. She gets one now after almost every glutening. About a week later she'll come down with the worst stuffies ever. After going gluten free, this probably cleared up completely.
