  1. Those are all really good suggestions and thank you! I'm sure there are a lot of things I'll ask for that won't happen, but this opportunity doesn't come around very often. I know a salad bar is in the plans, so prepackaged dressing and croutons are definitely something that I will note. Even having one meal a week or some prepackaged safe allergy...
  2. I'm in Colorado and have easy access to many Udi's products. I can send you 1-2 to try if you want. Honestly, Udis is not my favorite. There's another company called "Outside the Breadbox" that we prefer. The softest dinner rolls EVER, plus hot dog buns that are to die for (and I'm not even gluten-free and I like them).
  3. Hello wonderful parents of Celiac and gluten-intolerant children! The principal at my daughters grade 6-12 school is working rigorously to secure a new food service provider for her school's lunch program. He's also looking at making drastic changes to the eating environment to encourage high schoolers to stay on campus during the lunch break. My daughter...
  4. Boar's Head and Hormel Natural Choice (both prepackaged) deli meats are gluten free and tasty, too!
  5. We pretty much avoided bread for the first 6 months gluten free. It takes a little time to be removed from it. My kiddo was perfectly happy to stick with rice and gluten-free pasta (Tinkyada). It's actually easier when you might think. Now when we eat bread, it's usually any one of the Chebe varieties (either prepared from the prepackaged frozen or we...
  6. My daughter does not have asthma, but suffered from persistent sinus infections prior to her Celiac diagnosis. After diagnosis, the sinus infections cleared up (as did her Celiac symptoms). Whenever she is accidentally glutened, though, about a week later she comes down with a head cold that takes about 2 weeks to clear. Blech. Anyway, I'm not surprised...
  7. Hubby is a Strongbow drinker, through and through.
  8. We avoided it for a long time, too, until we did some reading up that much of today's bleu cheese is started synthetically. We buy store-brand (Kroger) blue cheese crumbles regularly with no problems.
  9. Pizza parties, birthday parties, banquets, etc. are always such a pain in the you-know-where. Thankfully our extended family has been very understanding and considerate and we have very few problems at family gatherings (which happen for us at least monthly). My daughter is older (11 now, was diagnosed at 9) so I never had to deal with it with her as...
  10. Perhaps in addition to documenting the problems as they accumulate (I'm assuming to pursue further legal action) you could buy him a dedicated toaster in the meantime?
  11. I would be lost without our thermos or Open Original Shared Link. Usually leftovers in the thermos.
  12. I'm having the Cranberry Turkey Medallions which also says gluten free. It is a Weight Watchers Fruit Inspirations by Smart Ones meal. Not too shabby. I'd give it an A- for quality and a B+ for flavor.
  13. We're on a Smart Food kick. It's white cheddar popcorn in a black bag by Frito Lay. Not good for you, but very yummy!
  14. I don't know about the MSG in the teryaki. It's not in the sweet and sour, though. My daughter feels yucky after too much MSG also. She can only have it about once a week without feeling wretched.
  15. my daughter and hubby are big fans of the glutino w/ sesame seeds bagels.
  16. My Celiac daughter has ridiculously long, dark eyelashes! So long that when she was a toddler/preschooler, the top lashes would slide into her lower lid when she was sleeping and we'd have to gently pull them out in the morning! She will never, ever need mascara! She has blue/gray eyes, though.
  17. I've been interested in this topic lately as well. My daughter was diagnosed with Celiac about 2 years ago. My Hubby (who is not my daughter's biological dad) discovered his own gluten intolerance when we removed gluten from the home and his skin rash and bowel problems cleared up w/out gluten. He went in for testing for Celiac (blood), and it came back...
  18. We're big fans of Chebe. We usually make golf-ball size rolls and as soon as they are out of the oven, place them into a gallon-size, plastic zipper bag. They taste best after about an hour. For some reason, the moisture lock of the bag gives a little big of moisture to the outside, yet they still are "crusty" and the chewiness of the inside doesn't seem...
  19. A year ago or so I posted about a problem with LaChoy Teryaki sauce with lukewarm response. I braved LaChoy products again (trusting the ConAgra brand as I do with many other products) and hubby (gluten intolerant) and daughter (celiac) both reacted to the sweet and sour sauce. I made sweet and sour pork with products I regularly use, except the sweet...
  20. We decided to keep our house gluten-free after realizing how hard it was to keep gluten away from the non-gluten. Our son who was just 3 at the time was young enough that he wouldn't really miss the gluten (it is our 11 year old daughter with Celiac). Hubby and I continued to eat gluten out of the house for a time, but in having a mostly gluten-free life...
  21. Wow! Thanks so much everyone for the warning about Bob's Red Mill! We use it a bit when frying (not healthy, but goood!) but I didn't think about how it would react baking. I'll try the rice flour/potato starch/tapioca flour blend as I believe I have all those on hand. Should I use a splash of xanthan gum?
  22. We want to make gluten-free pitzels. Anyone do this before? We have a few gluten recipes, but not quite sure how to modify for gluten-free. Here is a recipe: 6 eggs 4 c. flour 1 1/3 c. sugar 4 tsp. baking powder 1 c. Wesson oil 1 oz. Anise extract I'd probably just use Bob's Red Mill all-purpose. I'd like to use a ready-made flour blend...
  23. My husband is one of those in the "no diagnosis" category as well. We discovered his gluten intolerance after our daughter was diagnosed with Celiac and we decided to keep our house gluten free. Suddenly his tummy "wrongness" went away and so did that peculiar rash on his fingers. He decided that pursuing a diagnosis wasn't as important since he knew gluten...
  24. For the most part, my daughter, 11, rocks at the gluten-free menu. We made our longest stretch without a glutening for 6 months!!! Unfortunately, she was glutened last week which was a real bummer, but while the initial symptoms were harsh, after a good night's sleep she seemed back to normal. When she's glutened, she starts with really hard burps and hiccups...
  25. My daughter is also very pale normally, but before her diagnosis, she was wickedly pale. We look at pictures now and wonder how we didn't realize how sick she really was. She also had dark circles under her eyes and yellowing of her teeth, all of which have cleared up since being gluten free. When she gets glutened, that same sickly paleness comes back until...
