  2. Both Diesel (in Davis Square) and Bloc 11 (in Union Square) are now carrying gluten free cookies and raspberry bars. They're made by a woman in Stoneham.   4. I wonder if other grains in the US besides oats have the same cross contamination issues that exist with oats. Oats are not safe because they are stored in the same silos and are grown in rotation with wheat. I've pretty much taken it for granted that oats are the only gluten free grain that has this problem. But perhaps it is more widespread than I know...
  5. A 504 plan refers to section 504 of the Americans with Disabilities Act. It's a binding contract you make with your public school about the accommodations that they need to make to deal with any medical condition a child may have, such as celiac or a much more severe disability. Do they have something similar in Canada? and nice horse... I miss horses...
  6. I'm in the process of putting together a 504 plan for my son and it includes required training for all the teachers at the school so that they will understand celiac disease. They will even have to take a little test on it to make sure they have read and understand the materials. It might be worth putting together a 504 plan if your nurse is not taking...
  7. I use almond meal and cornmeal with garlic powder and Italian seasoning, coarse salt and pepper. Dip it in eggs and fry. Comes out GREAT.
  8. I make great gluten-free bread and rolls... It's just been too hot to bake. The point is if Whole Foods has the gall to charge us $10 a loaf, I think it should be fresh. I met the father of a celiac boy who lived in Italy. He said that his wife goes every day to a baker and buys fresh gluten-free bread for her son. I just wish something like that...
  9. So, we've finally got some decent HOT summer weather her in the Northeast. Which means I really don't want to be running my oven. But if I want bread or rolls in the house I have to make them otherwise I'm stuck with the frozen "microwave by the slice" bread from Whole Foods. WHY can't they provide any fresh gluten free baked goods? gluten-free stuff...
  10. I work in the IT department at dining services or a major university. We also have a mandatory meal plan. However, since it's mandatory, they accommodate all declared food allergies. The staff preparing the food is specifically trained to deal with food allergy and cross contamination issues. Go talk to the chef's and see what they can do for you. We have...

  12. I made them again tonight... I would recommend using a larger cookie sheet to keep them separate instead of putting them together like dinner rolls. They do spread quite a bit before they puff up. I upped the recipe by 1/2 and made 6 larger ones in a muffin top pan that I got from A M A Z O N and I made 6 smaller ones on a cookie sheet.   13. I used 2 whole eggs (instead of just the yokes) and double acting baking powder and I used half and half for the cream. I used Sargento shredded mozzarella for the cheese.   14. There's other recipes out there that use milk and oil in addition to the tapioca and cheese. But we're trying to loose weight, so I went with the lower fat version. If you google Brazillian Cheese rolls, you'll get more recipes.
  15. If you can have dairy, I suggest the recipe on the back of the large Pamela's bag... They are really, really good. It's a bisquick type drop biscuit. If you use less liquid, you could roll them out. I add sugar and make them in a muffin tin for strawberry shortcake.

  17. I'd make them re-do the test. Perhaps her results got mixed up with somebody else's. It took my son two years for his TTG to go back to normal, and his doctors knew that was normal and they are experts.   18. My son loves the Against the Grain rolls. but they're expensive and I think I could make something similar with a good recipe. Anybody have a recipe for a gluten free roll that uses mozzarella cheese? I could experiment, but the ingredients are so darned expensive. Thanks!
  19. I DO make breaded chicken with almond meal. The TJ's stuff is dark because the almonds aren't blanched. For breaded chicken, I use about 1/2 almond meal, 1/2 cornmeal and some Italian Spices or Herbes de Provence, garlic powder and salt and pepper.   21. You can get almond meal/almond flour at Trader Joe's for about $4 per bag. I use it in just about everything. It's not made from blanched almonds like the Bob's stuff, but it works quite good. I use it in lieu of breadcrumbs in a lot of things too.

He has celiac, and has been on a gluten-free diet for a couple of years. So far our preschool and prek experiences have been great without any formal plan in place.   24. The TTG is certainly the most reliable of the blood tests for celiac. When that one is positive 99% of the time celiac is what you're looking at. If it were my child, I would do the biopsy if the blood work was inconclusive.
  25. Our Ped GI at Children's Hospital in Boston said it takes a year in most cases for the TTG levels to return to normal. If it's way down after 3 months, you sound like you're on the right track.
