My dogs eat gluten-free. Our oldest dog has a wheat allergy/intolerence and if he gets any it makes his paws swell and itch so he bites them until they bleed. Doree, I think you were describing many my symptoms before being diagnosed celiac. The gluten-free lifestyle has helped about 90% of my problems. It will get better and better as you go along. Keep experimenting with flour/starch blends, different leavening agents and gums/gelatin until you find the best texture as well as taste. (Remember to make breadcrumbs out of the not-so-beautiful ones!) When you finally make a Gluten-free loaf that has the perfect crumb and your bread smells and sounds the way...

Time for a career change! Either that or sell all of your equipment and get new stuff to start a fabulous gluten-free shop. I sure wish a Gluten-free bakery would open up around here.

Not that I was tested, I have no insurance right now, but after tons of research and comparing symptoms of other celiacs on this site, I take sublingual B-12(cobalamin), vitamin D, Magnesium, Calcium and Iron supplements. I also agree with GFinDC about the pro-biotics. I buy the refrigerated kind with 4 or 5 strains from my local health food store. It has helped all of my issues with D and C almost completely disappear! -

You are still very new to all this. Give your gut some time to heal. Many of us have problems with milk or soy when first switching to a Gluten-free lifestyle, so avoid them for a while. Stick to basic, naturally Gluten-free foods at first. I would go with fish, veggies, rice and fruits the first week, then chicken, potatoes, and red meats. Maybe some quinona... -

Will, when you do go back to school, be sure to keep an emergency snack in your backpack for the times when temptation strikes. I always have roasted nuts, raisins or Gluten-free granola in my purse just in case. -

Last year I had Thanksgiving at my house and I cooked everything myself. No cc worries there! I use Roland brand hoisin, it does not have MSG and is gluten-free and delicious. They also have some other great Gluten-free sauces such as fermented black bean and garlic-chili.

I get mine from Asian markets.If there's not one locally, an online Asian foods supplier will still be much less expensive. That's where I get all of my rice flours (sweet, brown and roasted as well as regular rice flour) and potato starch. -

How about a baked ham with pineapples, mashed sweet potatoes, roasted asparagus and some cauliflower au gratin. Make the cauliflower and potatoes the day before and heat everything in the oven together as the ham bakes and asparagus roast. Good Luck!
