This whole topic is disturbing to me because it is always well maybe. I am a person that requires facts. The website that hosts this forum has quite a bit of info about oats. I for one will continue to eat them and I will be using my own oat flour in baked goods because I don't eat the whole batch so I can eat a piece of bread with oat flour in it or cake... -

Altitude can make a difference for sure (so can attitude but prolly not to the cakes ) I can't remember what the fix is (Longest day of my life in a long time) right now but I can look it up for you. I have some excellent baking books, I will look in the am to see if they have any extra helps for this. -

Yes I just got that cookbook. I saw the recipes and am glad to know the bread recipes are worth making. I have heard pros and cons about the bean flours, I am sure it adds bulk but a bean is a bean I would think! -

I have a vita mix 5000 and it came with a grinding container. Friday I tried brown rice and it turned out ok but I am going to sift it to make sure there are no large parts left over. Please give sorbets and smoothies a try. I have not been able to tolerate dairy but yogurt in small amounts is fine. I bought a vitamix a few years back and it is the best thing for this. Thank you for your encouragment. I think that first off I will try a mix for a baked yummy that somehow includes chocolate! Thankfully my favorite chocolate for baking is gluten-free. I guess I need to stop thinking in negatives and learn how to bake all over again. They didnt' teach this in any culinary classes I took! Makes sense about the vinegar...
