  1. My stores I go to are so limited. I haven't done any mail order yet. I put a lot of stuff in my shopping cart and then when I see how much shipping will be, I cancel out.   2. Bob's red mill does have steel cut gluten free oats.
  3. Bakers catalog (King Arthur) has a hamburger pan. They charge $30 for it, but they also sell english muffin rings for about 10 dollars that can be used for hambugers. They used to sell hot dog buns but not anymore. I like the foil option.
  4. I use Lock and Lock and keep them in my freezer. When I want to bake something I get it all out, measure everything, put the flours away and then let the measured flours sit out for 15 to 20 minutes and then bake.
  5. I have one of her cookbooks, the gluten free kitchen. She uses only cornstarch and potato starch for all of those recipes. I have made quite a few from each section and I can honestly say they all are delicious. They tase great, they bake great and turn out fine. Don't be scared Larry mac.
  6. Are you familar with the Celiac Disease Foundation? If you are, and a member, you can call them and get referals from them. They had a few at the convention earlier this month. They seemed to know what they were talking about and she knew that sometimes a lot more tha gluten needs to be cut out of our diets. I'm sorry I don't remember her name.

    Having a doctor misDX is one thing, okay all doctors make mistakes, but to be so flat out rude to you is not acceptable. EVERYONE should keep themselves informed of everything, especially of your health.
  9. Thank you. I am going to try this today. I have been wanting to bake something but it is too hot. This will make feel like I made something without turning the oven on.
  10. My daughter liked a Glutino bar that was peanuts and chocolate chips. She got a sample box at the Celiac convention and we cannot find them in the stores. So I thought I would try to make them, but don't know how. I would actually take any kind of cereal bar/breakfast bar.
  11. I have never heard of "nightshades", I'm going to be googling in a minute. But I read on the Enterolab website that said 3 quarters of celiac patients cannot tolerate yeast. I think that is a huge number. I know you said her diet is already very limited, but it's worth looking into.

  15. Thank you again. I asked my daughter and 2 days off the rice cakes she says she has gone from a 4 to a 1 and a half. (She can never just give me a straight answer). So I'm positive we are going off the Quaker Rice cakes. I like The Gluten Free Bible also. I think she makes a lot of sense on somethings, but she seems to contridict herself on some things...

  17. I make all gluten free meals. A lot of the meals you would eat anyway are very easily made gluten free. Any baking or pancakes or anything are ALL gluten-free. Honestly they taste better than regular gluten frecipes. I do keep regular bread in the house for my boys lunches. I pack my daughters lunch, and then I make my boys sandwiches on waxed paper...
  18. My daughter is 11 and she hasn't cheated yet. I told my husband that one day she will just give in and eat KFC. She's too young to understand the severity, she needs to see "I eat this, I get sick" Don't have anything in the house she can't eat. I only have wheat bread for my boys, nothing else has gluten in it.

  20. I read about it on their website, THEY say it is better than xanthan gum. But I don't mind xanthan gum I don't have any complaints with anything I've made. They say it is cheaper than xanthan gum but once you add the VERY high shipping, it's more. The company is overseas.   21. I am now questioning them also. My daughter has been gluten free for almost 6 months without 100% improvement. She is thinking it is dairy and wants to go dairy free after her birthday. (She wants some sherbert) But now I don't know, she eats rice cakes everyday. Two for lunch and throughout the week she finishes the pack. I guess I'll have to try going...
  22. I don't remember what recipe it was, but I baked a loaf of bread one time and it said to put it in the pan and let it rise to the top of the pan and then bake. Well I did that and when I took the bread out of the oven it was HUGE. It was ridiculoous. So now when I bake my own bread I always make it two loaves even when the recipe says it's just one loaf...
  23. My storage looks exactly like that picture. I even use lock and lock. I have 95% of my stuff in the fridge in the garage and the rest in the freezer in the garage. I just write directly on the container with a sharpie. As you know, when I want to make a batch of cookies, it takes me 2 or 3 trips to the fridge.
  24. I don't have personal experience with coconut flour or oil, but one of the men at my local health food store was telling me that he cooks everything in coconut oil. His eggs and buckwheat pancakes were two of the things he was going on about. I have seen Bob Red Mill coconut flour in the health food stores. I hate paying for shipping, this gluten free...
  25. We use the recipe from the gluten free kitchen. My daughter is the only one who needs to avoid gluten but we all are by proxy. She and I have never really cared for pancakes until we tried these. They taste better than full gluten ones and their texture is perfectly normal.
