YOu will need something. I have heard of people doubling the amount and using gelatin. I don't know about it's safety but you will only be using 1 or 2 teaspoons.

YOu could put pb and j on rice cake or corn thins. Or dip some pretzels in the peanut butter. Bananas are easy to carry around. There is a lot of debate on Slim Fast being gluten free, you could try that. Or another drink that you feel safe drinking. Pudding cups would go with the bananas.

I have the Nearly normal cookbook and I have loved everything I've made from it. I keep a Lock and Lock of 'nearly normal' flour that I make myself from the book. I didn't have my daughter biopsied either. The doctor who dx her said that the blood tests were pretty acurate now a days and said to skip the biopsy. I put her on a gluten free diet and saw major improvements. Not radical and not overnight. But slowly but surely she was feeling better. Thanks, I am so glad to hear it. Xanthan gum is such a budget killer. I bake a lot and try to make everything homemade for my kids. It starts to really add up. I bought the Organ gluten substitute online but after shipping I didn't save any money. -

Has anyone used guar gum instead of xanthan gum? I found one recipe, long ago, that called for guar gum and haven't used it since. Than I read in Living Without magazine that you can use either one. One time I bought my daughter some turkey from the deli. When we were home, I noticed that something was on the turkey. The clerk had used the cheese slicer and contaminated ALL of my turkey. At the time we were doing a dairy challenge, I was so MAD. I am now only buying her packaged meats. -
I haven't tried going through my insurance, but I met with the one at the celiac disease conference in May. And all I can say is, I'm glad I didn't have to pay for that meeting. She just told me to let my daughter eat nachos and and to buy greek style yogurt. I would suggest eating well but still add a multivitamin.

I understand your dilema, but yes I think you are overracting. You are not "the crazy allergy" mom, food allergies are serious. But that doesn't mean you can change the whole theme of the day. Don't be sad for your daughter, it is only going to make her feel bad about her diet restrictions. Feeling bad won't change anything. And I bet you think it is... -

Hello, welcome. I am glad you are finding out what is wrong with you. Even if you are not Celiac, you are allergic to everything a celiac cannot eat. I don't think you can transition into gluten free, I think you have to omit it all at once. You can either look at this as a great opportunity to change some bad eating habits, or eat VERY expensive junk... -
I know what you mean about organic and gluten free being confused with each other. When my daughter was first dx, my mom called me to tell me she found organic oatmeal at stater bros. Don't get me started on how many people here gluten and then think she has to watch her sugar. So I agree, the more people hear about it the better.

At least this is a start. I agree about Bob's mixes. I think their all purpose mix has too strong of bean flavor to it. But I do like the individual flours. -
I have made something very similar before. I saw them being made on Everyday Baking. And did that recipe with my own flour substituion. I made up 2 or 3 cups of this ratio 1/2 C rice flour, 1/4 C tapioca flour 1/4 potato starch. They were very good. I didn't like the filling so much, they used marshnellow cream and butter. I will add some sugar next...

I have never ordered from them, but I wouldn't let their cheap prices worry you. I go to an Asian market and get rice and tapioca flour for $1.50 a pound. I think places like Bob's just charge too much because they can. I am going to order from them for sure.

My daughter was the same way. Then we realized that quaker rice cakes are cross contaminated. She's feeling a lot better now after cutting those out. You might be getting gluten from some place you didn't know has gluten, like a stamp or envelope. I want my daughter to keep a food dairy so we can see if any patterns occur, like corn or tomatoes bother... -

I saw in King Arthur (Bakers) catalog the cutest cake pan. It is shaped like a giant cupcake. It bakes in 2 parts and then you put it together with frosting. But the hamburger and present ideas sound really cute. ANd you probably don't need to buy anything. -
Whatever you do just don't buy Walden Farms. It's gluten free but it literally tastes like ant spray. I actually spit it out in the sink as FAST as I could.
