ARCHIVED gluten-free Cream Of Mushroom Soup
Lisa16 replied to Crystalkd's topic in Gluten-Free Recipes & Cooking Tips
Glutino actually makes a cream of mushroom buillion. it comes in a white plastic jar and it is pretty inexpensive. I found some in the klocal grocery store, but I bet you could get it online. Of course, the other thing to do is make your own from scratch. 1 large box of mushrooms (big guys) quartered 1 medium shallot 2-3 cloves of garlic, sliced... -
ARCHIVED What Do You Do For A Living?
Lisa16 replied to Bosque's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Hi Bosque! I am a professor at a large state university. This is the ideal job for a celiac-- you only have to physically be in one place for a couple of hours each day-- the rest of the time you can run to the bathroom all you like. Plus you get the summers off and a long holiday break. Plus the occasional sabbatical. If I didn't have this job, I... -
ARCHIVED Dr.'s Think I'm Nuts!
Lisa16 replied to emileigh79's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hi! I just wanted to add that if you had been gluten free prior to having the bloodwork, your test would come back negative. From what you wrote, it sounds like this may have been the case. -
ARCHIVED Sprueberg-- A Gluten Free City
Lisa16 replied to Lisa16's topic in Introduce Yourself / Share Stuff
Yeah-- I have a bit of a hiney myself and I hate to go shopping in Gluntenville! I LOVE the island idea! We could call it Tropical Sprueville and it would have divine spa services! And there would always be a coupon in the gluten-free Gazatte! -

ARCHIVED Sprueberg-- A Gluten Free City
Lisa16 replied to Lisa16's topic in Introduce Yourself / Share Stuff
Aw heck-- let's put it right on the border! One half can be in the US and there will be a sister city in Canada. Let's call it Celiacville (it has a French touch, non?) And there will be no check points between them! Both currencies too. But then it is a much larger metropolis to accomodate the Canadian celiacs too. Something in the neighborhood of... -
So I was thinking that the celiac population in the US is probably in the neighborhood of 2.1 million people-- enough to found a sizeable city. What would a gluten free city look like? -There would be checkpoints to get in where they would confiscate anything with gluten in it -Glutino and Knicknick (I can never spell this) would have their headquarters...

ARCHIVED What Lotion And Soaps Do You Use?
Lisa16 replied to foodiegurl's topic in Gluten-Free Foods, Products, Shopping & Medications
Lush has any number of lotions and soaps that are okay, as does Burt's Bees. In addition, you can try out korres (a Greek company) that is great. Also, 100% pure makes some great lotions. -
ARCHIVED Degree Of Sensitivity To Foods Question
Lisa16 replied to doodle's topic in Gluten-Free Foods, Products, Shopping & Medications
Hi doodle! I am in the "don't at out" group, but there are times when you are forced into it-- if you are traveling, for example. I am glad you are investigating this so thoroughly! Thank you.l I think you are taking reasonable precuations for a mixed kitchen. One thing I wasn't sure about was if you were aware about the baking sheets. I have... -
ARCHIVED Expandex- Modified Tapioca Starch?
Lisa16 replied to Lisa16's topic in Gluten-Free Foods, Products, Shopping & Medications
Hey thanks! After reading the link, I bet it is the genetically modified starches that people are worried about. I feel better now. I will go make an angel food cake now. -
ARCHIVED Expandex- Modified Tapioca Starch?
Lisa16 replied to Lisa16's topic in Gluten-Free Foods, Products, Shopping & Medications
Sorry Peter-- I didn't mean if we had to worry if it was gluten free or not. I meant if we had to worry about any adverse effects from the "modified" part. Broken down how? What does this do-- I mean, what is the purpose of modifying it? And what does it do inside of bake goods? And wht does it do inside of you when you eat it? It seems to me that... -
ARCHIVED Expandex- Modified Tapioca Starch?
Lisa16 posted a topic in Gluten-Free Foods, Products, Shopping & Medications
Does anybody know about this stuff? I looked up expandex and all I could find was that it is a modified tapioca starch. But what does this mean, exactly? How is it modified and is it something we have to worry about? Thanks! -
Interestingly enough, the web site I quoted from does in fact link the two allergies. I would be very interested to know what percentage of people have both out of the antibiotic-sensitive population. I would guess it is on the high side.
-
Momma Goose, are you telling me that I was mis-diagnosed (yet again?) Are you telling me that I can go eat gluten again? Are you saying that this entire year (+) that I have been gluten free was for naught?
-
I was diagnosed by DH biopsy. I was told this was a definitive diagnosis. Furthermore, I believe in my ase it is an advanced form of the disease. Once your body takes to depositiing antibodies in the skin (or around the heart), you have been eating and reacting to gluten for quite awhile.

ARCHIVED What Are The Types And Preferences?
Lisa16 replied to doodle's topic in Gluten-Free Recipes & Cooking Tips
Hi-- I forgot to say earlier that if you read the threads about flours here, you will find that there seems to be vast ranges of opinions about brands of flours and the cross-contamination issue. I have seen people here talk about how difficult it is to clean a millstone (some sensitives get sick from Bob's Red Mill) and I have seen other people talk... -
ARCHIVED "Super Sensitive" Celiacs.....
Lisa16 replied to jerseyangel's topic in Super Sensitive People
Thank you Jestgar. I will try to muster up some hope. It is nice to get a little reassurance from people who have been there too. You know, I would like to second Mike M's plug for domata flour. I have been experimenting with Jule's (aka nearly normal), Better Batter and domata and I must say that for me domata wins hands down. -

Woah-- sorry. I accidentally hit a button I didn't mean to. I think we all live in Lake Wobegone. Actually GK says he modeled Lake Wobegone on Freeport, MN in Stearns county. Freeport is "the city with a smile." I actually live North of there, but Wobegone is a state of mind, afterall. :-) -

Hi ranger! -
The anger in this thread is palpable. I am very sorry about that. I have heard it said that at the root of all anger lies fear. But we are not alone. Look how many of us are here. And we are all afraid. We have celiac disease. We have all lost a measure of control over our lives. We are all grasping for security and absolute answers....

ARCHIVED "Super Sensitive" Celiacs.....
Lisa16 replied to jerseyangel's topic in Super Sensitive People
I belong here too-- thanks for the thread! gluten-free, dairy free, no nitrates (or -ites), no sulfites (or -ates), no msg and now no pistachios and multiple medicine sensitivities. I have DH and get lots of topical reactions to toiletries. I too went undiagnosed for many years (definitely over 20, maybe as many as 30+). I read that it can take... -
It is astonishing to me how deep the feelings run on this issue. Why do you care what toiletries another person uses? I can say that for me it seems to be very important that I keep as gluten free as possible so I have done a lot of research to find safe toiletries that I can use. Please remember that doctors can be wrong-- even very famous ones...

ARCHIVED How Does Your Garden Grow?
Lisa16 replied to missy'smom's topic in Introduce Yourself / Share Stuff
Here in Lake Wobegone we just got 4 inches of snow and it is currently -10. Daffodils you say? Ah, to sleep, perchance to dream... I live in zone 3. I suffer from zone envy. Bad. I love tulips myself and usually plant several hundred bulbs, but the squirrels get them or a late snow storm. And our growing season is so short! Sometimes the hydrangeas... -
ARCHIVED What Are The Types And Preferences?
Lisa16 replied to doodle's topic in Gluten-Free Recipes & Cooking Tips
Here is what I have figured out for myself-- In most cases you can use a flour blend (usually rice based) for most everything. I like Domata flour the best so far-- it is dairy and gluten free and certified by the CSA. I have also tried better batter and nearly normal (aka Jule's) flour. They are all similar and contain a xanthan or xanthan-like ingredient... -
ARCHIVED Initial Forrays Into Candy Making- Cf, gluten-free
Lisa16 replied to Lisa16's topic in Gluten-Free Recipes & Cooking Tips
Yes-- the CF is for casein free. Dairy is out. So no English toffee and no chocolate (cocoa yes.) I tried a fondant and it worked out-- but it is mind-numbingly sweet. I rolled it in crushed pecans. I also made merengues-- but I think taffy and marshmellows will be next on the list. Thanks! Any more dairy free, gluten-free ideas out there? ...
