Celiac.com - Celiac Disease & Gluten-Free Diet Support Since 1995

Everything posted by pele

  1. I've been on it for 8 1/2 months. I started because after one year gluten-free I was still pooping, like, seven times a day and had unpredictable diarrhea. I did not go through a big die-off like some people report, but I went through sugar and chocolate withdrawal! Once that was over, after about two weeks, my mouth and tongue started to feel cleaner...
  2. Ya know, it always occurs to me that we, as the SCD group, are not supporting Scott by buying prepackaged processed gluten-free goodies from the gluten-free mall. So I keep telling myself I am going to buy something else, vitamns or a t-shirt or a book, to show my support for celiac.com. And I'm gonna do it, too. I'll let ya'll know what I order.
  3. Kristina and Dawn Thanks for the interesting discussion on hormones. There have been discussions about adrenals, thyroid, et al. on the related conditions section, but it's nicer to talk about these things with people we know. I also felt I was on the verge of Addison's a year ago. I had bronze patches of abdominal skin, no energy, and couldn't even...
  4. If you get a chance, read In Defense of Food by Michael Pollan. He says something to the effect that if you don't keep a box of sodium erythobate in your cupboard to add to food, why on earth would you buy (and eat) something containing it? I think he makes a good point! As far as being SCD legal, somehere Elaine said that most people cannot afford expensive...
  5. I think we had more trouble adjusting to me going gluten-free than the SCD. I went gluten-free in March 07 while my husband was away. When he came back I told him he was cooking for himself. He didn't quite believe me at first, then got over it. He loves to cook and has very different tastes than I do. I was poisoning myself trying to cook for us both--my...
  6. Oh, BTW I hear that plastic cups are now being made from corn, and causing anaphylactic shock in people with corn allergies.
  7. Kristina I wish I had some miraculous advice but I don't. I would be very stressed out in your shoes. I am glad that nothing bad has been found but it sure would be nice to find out what's wrong so you can fix it. Best wishes

    ARCHIVED Equesterians With Celiac

Hi everybody A horsey thread--I love it! I keep my two horses at home and ride often, usually trailer out to meet friends. I have never had any problem getting glutened around the horses. I feed a low-grain feed that has only a teensy amount of wheat and no barley, rye or oats. And I wash my hands when I come in from the barn. I do not use straw, which...
  9. Hi Mom of J This probably is not what you want to hear, but I would recommend the same sensible strategy for avoiding gluten: use foods that are naturally corn (and gluten) free. Meaning, avoid processed foods and stick with plain fruits, vegetables, eggs, meat, nuts, honey and olive oil. Hmmm, that sounds like the SCD. I'm glad you discovered the...
  10. Hi there, First off, biopsies (and blood tests) do not rule out celiac sprue because they are notorioulsy insensitive, meaning there are high rates of false negatives. So you might have celiac disease, and even if you don't you might be gluten intolerant and/or lactose/casein intolerant. You may have gut damage that is exacerbated by an overload of unfriendly...
  11. Hi Dawn I would say I am very compliant with the SCD. I did not do the intro, I think partly because my edition of BTVC does not emphasis it. I read on healingcrow that Elaine said she went back and forth on the necessity of an intro, so each edition of the book differs in that regard. Otherwise, my cheating consists of using a tablespoon of tamari sauce...
  12. Shay: Thank you for this info! See my recent post under the SCD thread. Amy: No one else has said it so I will. STOP EATING GLUTEN! You would have to be insane not to go gluten free for at least three months to see what happens. Blood testing notoriously misses a high percentage of celiac cases (70% false negative in one study) and doesn't test for non...
  13. Well, I went to the NP last week to get the results of lab work. A year and half after my first test, my Vitamin D level is finally in the normal range--43, reference range 32-80. For the first year I took 1000 units per day. Nothing happened. I sunbathed some this summer and fall, and took 2000-5000 units per day. The NP says I should get my level up...
  14. Hang in there. I couldn't eat apples for years, cooked or raw. Now, after 8 months of SCD, I am eating not only applesauce but whole raw apples! Yay! The ones I am eating are locally grown and unsprayed (swiped 'em off the neighbors' trees). I couldn't care less about not eating wheat, but boy did I miss apples.
  15. Hi Valda It sounds like you are on a good diet. If I was going to go off the SCD and wanted to bake, I would use garbanzo bean flour before I would use grains. I bake very little, so like you, mostly protein, veggies and fruit although I eat nuts, too. I am also enjoying raw veggies. I'm really glad I can eat them, there is something very satisfying abut...
  16. I heard something about this in a lecture, too. Is this the one that tests deamidated (sp?) gliadin? I also heard it is supposed to be highly accurate.
  17. Apparently different people react to different levels of guten. One study showed that MOST celiacs do not react to under 10 mg of gluten, but at the thime I was baking with wheat, I must have been one of the few. This brings to mind the fact that some celiacs do not experience "reactions" to gluten that they can identify, however, the immune system is...
  18. I tried to bake things for my husband with white flour and got sick every time. The explanation I got is if flour is airborne it lands in your mouth and you swallow it. We no longer have any gluten-containing flour in the house. Fortunately, brownies are one of the easiest things to bake gluten-free, because brownies are really all about the sugar, butter...
  19. Hi Geoff I think Sherry is right on target. If you area diagnosed celiac, you have gut damage. It can take more to heal that than a gluten-free diet. I wouldn't waste my time and money at Mayo either, but that is just my opinion. Try taking probiotics and digestive enzymes. Stop eating processed foods. Try the Specific Carbohydrate Diet. There is a...
  20. I've discovered that you don't need to bake with nut flour, that nuts ground to the consistency of nut butter work fine. I plan to try this sunflower seeds soon. How did the cashews work out? Can you eat walnuts?
  21. Applesauce Cake 2/3 cup homemade plain applesauce 2/3 cup honey 1/2 cup coconut oil 2 eggs mix all of these together. It might be necessary to warm the ingredients up slightly. Add and stir in: 1/1/4 cup Trader Joe's Almond meal (like almond flour) 1/4 tsp baking soda a few shakes of cinnamon, cloves and nutmeg 1/2 cup chopped pecans Bake...
  22. I made an applesauce cake today and am posting the recipe on the recipe thread.
  23. I use my Champion juicer to make nut butter. Never use it for juicing! Glad to see you on the SCD thread. I'm another one who has seen a big benefit from the SCD. And I think your doc is on the right track suggesting to get vitamin levels checked. Vitamin D is part of the endocrine system and crucial for a healthy immune system. We can get really messed...
  24. I have to ask--have you tried a serious heavy duty digestive enzyme supplement like Digest Gold? And gobs of probiotics?
