  1. It sounds like you need a treat. Try these: Chocolate Chunk Quinoa Cookies 1/3 cup butter, softened 1 cup packed brown sugar 1 large egg 2 tsp. vanilla 1 1/2 cups quinoa flour 1 cup oats (gluten-free oats only, or try quinoa flakes) 1 tsp. baking soda 1/4 tsp. salt 1/2-1 cup chocolate chunks or chips 1/2 cup chopped walnuts or pecans (optional...
  2. I've been making this one for years. Don't be daunted by the list of ingredients, it comes together pretty fast. CHICKEN CURRY 1 chicken 3 lbs, skinned and cut up (I usually use thighs) 1 tsp salt 1 tsp garlic 2 tsp ginger 1 jalapeno (cut in half for a milder curry, chopped for a hotter curry) 2 potatoes 1 tomato chopped 1 medium onion
  3. How about a simple ganache. GANACHE FROSTING 6 oz/170g (2-3oz bars) bittersweet chocolate
  4. This is a nice chocolate cake that has never failed me (and non celiacs gobble it up too). Gluten Free Chocolate Cake 1/2 cup sorghum flour 1/2 cup tapioca flour 1/2 cup rice flour 1 cup cocoa, sifted 1/2 teaspoon baking soda 2 1/2 teaspoons baking powder 1 1/2 teaspoons xanthan gum 3/4 cup salted butter, room temperature...
  5. Food Science and Flour Mixing: Everything you need to know 1) You want four main types of flour in your mix-- Bodifiers-- Teff, Sorghum, Rice, bean flours, brown rice, quinoa, millet, amaranth, and cornmeal are a few options. These provide bulk and protein as well as the vitamins (if any, teff is a great source of vitamins). Modifiers-- Tapioca starch...
  6. Your doctor is not keeping current. People with celiac disease often have malabsorption issues. It's not the food we eat but our ability to absorb the nutrients in our food.
  7. I can't take glucosamine, it gives me awful stomach aches.
  8. I have a sluggish bowel and often have constipation and I'm on iron supplements. I have increased my magnesium to balance out the irons effects and am way more comfortable now. It works.
  9. You're welcome. The woman who originally posted this recipe has suggested that if you add vinegar and some brown sugar to balance it, that it should make a nice bbq sauce.
  10. I've bookmarked that site. Thanks Ivanna. Now if I can get over this virus maybe I'll have the energy to make some more bread.
  11. Those sound tasty. I have been making a nice chicken wing recipe for years (used to date a cook from a chinese restaurant in China Town. I brown wings in a wok with garlic. While browning I mix together soysauce 1/2 cup maybe with equal amounts of sugar (this is not a skinny recipe) and a few dried hot chilis. I add this to the browned chicken and cook...
  12. Sorghum flour - used in a mix adds a lovely flavour to baked goods. I like Garfava flour (never notice a beany flavour lots complain about but then I like beans), Keep Tapioca, rice and potato for lighten up mixes. Haven't tried Quinoa flour but I've just bought a bag, it is suppose to be higher in protein as well (the higher protein flours help the mixes...
  13. Someone on the Delphi forum posted this recipe for No Tomato Tomato Sauce, you could use it as a base and add BBQ sauce ingredients to it. 1 1/2 cups steamed carrots 1/3 cup steamed beets 2/3 cup water 3 tablespoons lemon juice 1 1/2 teaspoon salt 1 tablespoon basil 1/2 teaspoon onion powder 1/8 teaspoon oregano 3/4 cup chopped...
  14. It sounds like your doctor is not keeping current. There are a pretty significant number of people with Celiac Disease who suffer from constipation. I am one.
  15. I use the lock and lock storage containers for my flours and write directly on them with a sharpy as well. I have a second fridge down stairs so I store my flours in there.
  16. Try this recipe: MICROWAVE POLENTA Combine: 2-1/2 cups water 1/2 cup cornmeal 1 teaspoon sea salt (less if using table salt) in an 8-cup glass measure or med. glass bowl. Cook on high for 5 min. Stir, cover loosely w/paper towel, and cook 5 minutes longer. Remove from oven, uncover, and stir in 2 tablespoons butter a pinch of fresh-ground pepper...
  17. I also have problems with chronic sciatic pain. Now that I suspect that I have celiac (I get too sick to gluten load for testing) and am really careful about my diet I have had only 1 flare up this year (I once went 3 years with no relief from sciatic pain). I have found an amazing chiropractor that is able to give me relief from the pain and stop the flare...
  18. Happy Birthday. You daughter is very thoughtful. I just had my 50th birthday and had to make my own birthday cake. Hubby just didn't feel like he could and my 12 year old triplets are only just starting to cook the odd thing. The 20 year was away but if she had been around my guess is she would have made the cake. It's funny how small kindnesses like...
  19. I went gluten free before I was tested (I had done an elimination diet and discovered for myself that gluten was my problem) so I have never received a diffinitive diagnosis. This is now come back to bite me in the @ss. Because my doctors can not prove that I have celiac they will not test my children. They know I can't have gluten, they say the genetic test...
  20. At my last pot luck I made sure I had many serving spoons (metal and bought at a dollar store) and a sign above the table explaining that their were people in the group who would be very sick if any of the serving utensils were moved from their designated dishes. I kept the gluten free on one end of the table and the gluten food on the other. I had no cross...
  21. I have GERD, which is pretty common for people over 40, and salmon (and most fatty fish) makes me have terrible indigestion.
  22. I just wash, dry and freeze. To use, I dip in boiling water for 30 seconds to a minute and the skins slide off.
  23. I'm going to give these a try. I love recommended recipes.
  24. Do you have a self cleaning oven? I left my stone in the oven when I cleaned it and it came out looking like the day I bought it.
  25. Hi Ivanna, I have been googling to see if the freezer actually prolongs the life of flax meal and I didn't really find a good answer. Most of what I found said to use it within 2 weeks of grinding which is less time than your package says. Freezing prolongs the shelf life of most nuts and seeds so I'm assuming that it should do the same for flaxmeal. I...
