  1. I haven't tried either of these recipes, so I don't know if the advice I am giving you is applicable. We have a fair degree of humidity here and I had difficulty with many recipes for a long time. I now try a recipe as written, if I have a baking time problem or a collapsing problem I will remove 3 Tbsp of the liquid portion of the recipe and try again (and...
  2. Very similar recipe to Carol Fenster's, so I'm betting it's good. Her recipe is the best I've come across so far. The recipe I have uses sorghum flour instead of brown rice flour and xanthan gum instead of guar gum and has the addition of apple cider vinegar but otherwise they are the same. I like to make these into individual rounds, do the prebake and then...
  3. Hi Roxanne, Here is a recipe for a basic white bread that is moist and holds up well. It is from Elizabeth Barbones new cookbook "Easy Gluten-Free Baking"(I highly recommend this book, I have had great success with all the recipes I've tried from it. Her hamburger buns are excellent and hold up well, so the kids take them daily to school for their lunches...
  4. You're welcome. I like to make a double batch and keep a supply in the freezer. Yum.
  5. There are some good blogs and recipe sites on the internet for finding recipes that suite all different tastes. Here are a few that I like: Open Original Shared Link (she has some excellent wrap recipes and it is her granola bar recipe that I passed on to you) Open Original Shared Link Open Original Shared Link Open Original Shared Link Open Original...
  6. It depends on where I go for the party, some of my family/friends get the cross contamination issue and are very careful, I will eat what they prepare. But the majority of people really don't get it, so I bring my own, or I eat before I go, and go for the company not the food. People understand, mostly. My two daughters are vegetarian, so I let them have...
  7. People handle this in different way. Because my daughter and myself both have Celiac Disease, and I wasn't getting well, we made the house totally gluten free (two vegetarian daughters, so I do let the odd vegie hotdog/meat, which almost all contain wheat into the house but, i use a stainless steel pan to cook them in and I scrub really well after then throw...
  8. My daughter was diagnosed this year at 13. I noticed a similar pattern that you described. She no longer torments her sister, so there is less fighting, she is less absent minded about school work (she actually had a pretty good student phone and ask HER some homework questions this weekend). Her exzema has cleared up completely (her hand used to look like...
  9. You can still cook them on foil, just don't close it up and seal it or you will steam the food. Just my opinion but I don't think hamburgers or steaks are very good steamed, the hotdog would be OK though, not the same as grilled but OK.
  10. Some people with Celiac Disease, about 10%, react to oats, so it is recommended that they are avoided for the first year. The following recipe is what I make and they are really very good. I skip the dried fruit (daughter wouldn't eat them) and add 1 cup of chocolate chips. I also mash 1/4 of dates with the honey and brown sugar (daughter can't tell it is...
  11. You could do a foil package with sliced potatoes, vegies of choice (zucchini, carrots, peppers, onion are good choices), s&p, and what ever fish you like (halibut or sablefish/blackcod would be excellent). Or you could do them all in separate foil pouches if you don't like your food mixed together.
  12. You're welcome. I love it when someone gives me a TNT recipe that I don't have to mess with until I get it right. So I'm happy to share the good ones with others.
  13. The recipe from gluten-free Gobsmacked is my go to recipe. I make regular one for the kids for lunches but my all time favourite is the sundried tomato one. It is really really good.
  14. This french baguette recipe is excellent. Make it the day you want to eat it though, as like regular french bread, it doesn't keep. Our area has high humidity so I have to reduce the liquid by 3Tbsp., if that isn't a problem for you just do recipe as written. It works well everytime. If you don't have guar gum just double the xanthan gum. I sub in arrowroot...
  15. I second what mamaw says. I have high humidity here and so I have the same problem with bread falling that you are describing. I reduce the liquid by 3 Tbsp and increase the cooking time by about 5 minutes and my breads have been working. Good luck.
  16. I have a round cuisinart, but it only does one at a time (it was a gift and free is a good price right now, lol). I do have to spray it occasionally but mostly I have no problem with sticking. I have a tried a number of gluten free waffle recipes and this is the one that the family likes best (and I also have 4 kids, 3 of them are 13 year triplets, so...
  17. Here is the bagel recipe that was given the thumbs up by my children. My kids like them best topped with the poppyseeds. Bagels from Living Without TNT Spring 2006 Multi-Grain Flour Blend: 1 1/4 c. garfava flour (I use millet as I
  18. I'm also intolerant to nightshade vegetables, which included the potato. I sub arrowroot for potato starch in recipes. I have been looking at the bags of sweet potato starch and wondering how I can incorporate it into my baking. Hmmm.
  19. I've converted it to a usable recipe (for my own benefit but thought I'd share). Let me know if I have transcribed any of it incorrectly. gluten-free RHUBARB CAKE 1
  20. I have the same problem with bread recipes. I have to lower the temp of the oven by 25 degrees, bake longer and reduce the liquid in the recipe by 2-3 Tbsp to get the same results as others. I think it has alot to do with the humidity here, which is high.
  21. gluten-free CREAM OF MUSHROOM SOUP This recipe is not a soup for eating out of a bowl but a soup for adding to casseroles etc.. 2 Tbsp unsalted butter
  22. I have purchased two muffin top pans (holds 6 each) and they work brilliantly for gluten free hamburger buns/english muffins. Prior to buying these, I used dollar store 8 oz souffle dishes to make these, easy to buy and easy to use, just a bit taller and less wide than the pans I use now.
  23. I haven't found an iron supplement with gluten. I'm unable to tolerate any iron supplements(all give me bloating and severe nausea) with the exception of Floravit (this is a yeast and gluten free liquid, it works slower than the other supplements but my anemia is resolved and I'm just working on getting my ferritin levels up). Watch out though, this company...
  24. I make this granola bar about 3 times per week. I make it with 1/2 nutty flax cereal/1/2 gluten-free rice crispy cereal, 2 cups mixed nuts and 1 cup chocolate chips (one daughter will not eat fruit and chocolate just works well in this recipe), sometimes I will add 1/4 cup chopped dates to the honey/brown sugar part of the glue (it melts well and blends with...
