Yes, beer is a definite gluten no-no, for the reasons you stated. But this problem is a sneaky one. I didn't wake up to it because I never had problems with bread, believe it or not. I knew pasta was a problem for me, but because I could eat bread without ill effect I didn't think of flour as being a problem. Good luck with your journey. -
I would imagine that biscuits are very akin to the good ole English scone. I haven't tried making these gluten free yet, but I'm going to give it a go.

I think the major reason for self-diagnosis (beyond the obvious inability of the doctors to diagnose us) is that after we have finally figured it out for ourselves it is too late for the official diagnosis. -

If you have been gluten free for more than a couple of weeks your blood testing would not be valid. Nor would the small intestine biopsy. I don't blame you for not wanting to go back on gluten if you have been gluten free for a while, because it would really be painful (and probably harmful). I have never had headaches or any neuro problems. I developed muscle weakness and joint pain later but that was because I had developed psoriatic arthritis (and the skin problems and itching that goes with it). For me, the kind of reaction you are talking about came from lactose; half an hour after frozen yogurt or ice cream I would be in the toilet.... -

I don't know, it may not even be gluten. When you first go gluten free your gut is in a very fragile state and often has problems with things that would not normally be a problem. Your body is making a tremendous adjustment when withdrawing from the gluten (which is toxic to you) and many people report a withdrawal symptom for some time. There is also the issue of other nutrients your body may be lacking through improper absorption of nutrients in the gut. Have you checked that all your vitamin and mineral levels are up to snuff...

I think you will find a pretty unanimous yes to that question. One of the first pieces of advice to newbies here is to get a dedicated toaster because you will got cross-contamination from gluten crumbs in a shared toaster. Looks like a new toaster is on your horizon
