When I poured the pumpkin mixture in, I filled it so that it just covered the top of the edges of the crust, because I was a little concerned the edges might burn if they were exposed.   7. I've made chocolate chip cookies with Pamela's and didn't have any trouble with them getting hard. In fact, one batch I overcooked a bit, and I was disappointed because they seemed too done. I put them into a rubbermaid storage container and the next day they were nice and soft. I think the real trick is to eat them all before they get a chance to harden...
  8. I just used the recipe on the label of Libby's pumpkin, but what was so good was my crust! I took a bunch of gluten-free gingersnaps (from Trader Joe's), crushed them in the food processor, mixed them with a little melted butter and pressed them into the pie plate.   11. I also take 100 mcg of Synthroid. I called Abbott and spoke to them. They said they "do not use any ingredients containing gluten." I suppose it's possible that the manufacturers of the products that supply Abbott might use gluten and Abbott doesn't know about it, but I think that's as good a statement as we're going to get.

  20. I shop at Costco, Trader Joe's, New Seasons, Albertson's (they don't carry any specialty gluten-free foods) and occasionally Whole Foods. There's a specific food item I pick up whenever I'm at Target, also. I have also ordered things from Amazon - great prices on Pamela's baking mix.

I would include things like canned chicken and tuna, gluten-free soups, nonfat dry milk powder, gluten-free beef jerky, nuts or nut butters that your son isn't allergic to, rice, canned beans, canned fruit. You'll have to go through your stash and rotate things out periodically. Don't forget the can opener!
