  1. I made a cake with Bob's Red Mill gluten-free chocolate cake mix a couple of weeks ago. I used a non-dairy margarine, because my sister is also lactose-intolerant. Used a store-bought frosting that was also non-dairy (I don't remember the brand, maybe Pillsbury? It's the white one with sprinkles). The cake turned out FABULOUS!!!! It tasted great, I was...
  2. I also found out this week that the yogurt I've been eating on a daily basis is not gluten free. Grrr!
  3. Checking in. I've lost about a pound and a half this week. 11.5 to go. I've been better about not snacking so much. That's my big downfall! How are the rest of you?
  4. I recently saw commercials for 5-hour energy. I think I'll have to try it. Where can you buy it?
  5. I love Pamela's - and I have used her baking & pancake mix for a lot of things: cookies, banana bread, scones. It's delish! We have some Bob's Red Mill certified gluten-free oats and it tastes good. I'm not a huge oatmeal fan, so I haven't really missed it that much.
  6. I just found out it contains gluten (natural flavors). I've been eating it nearly every day now for a few months. Obviously I don't react to gluten, but I wonder what it's been doing to my intestine. Here I have been so strict and so careful, now to find this out! Grrr, I'm so mad. Plus I just bought a 24-pack at Costco last week.
  7. Bumping this thread up. I need to post regularly. As of today I have 13 lbs. to lose and some bad eating habits to correct. I think I'll post once a week - Friday is as good a day as any for me. Anyone else want to join/rejoin this group?
  8. Maybe telling them would help you stay on the wagon. I told everybody about my Celiac when I was diagnosed. It would be very difficult for me to fall off the wagon without a bunch of people noticing and pointing it out! Keep yourself accountable anyway you can.
  9. I made this corn muffin recipe the other night when we had guests over for chili and cornbread. It was a huge hit - everyone loved them! Corn Muffins Ingredients One package Bob's Red Mill Gluten Free Cornbread Mix 1 stick unsalted butter 2 small or 1 large can(s) creamed corn 1/2 c skim milk Directions Preheat oven to 375F Mix all the...
  10. I believe they carry Sambazon at Whole Foods. I'm planning to try it.
  11. I've gained more than 5 lbs since being diagnosed last summer, and at that time I was already at least 10 lbs over my ideal weight. Starting today I need to cut the "crap." Eat whole, fresh, healthy foods and not substitute gluten-free junk food for what I have been missing (gluten-y junk food). So this is a thread for myself to keep me accountable...
  12. I made a Chebe pizza crust tonight. OMG! It was fabulous, didn't have that funky gluten-free taste at all! I bought several packages of the Chebe pizza crust mix at the online site where I usually buy my books. The package says you can make breadsticks and calzone with the mix. I might have to try that next. YUM!
  13. I wish mine were long, but they are not!
  14. Our family went gluten-free (at home, anyway) to avoid me getting CC'd at home. It works well for our family, especially since I am the "chief cook and bottle washer" anyway! When they are away from home, they can eat whatever they want. Both my kids tested negative for Celiac, but I am aware that at some point, it could rear its ugly head.
  15. Maybe you have a virus and your symptoms have nothing to do with not eating gluten. Are you taking in carbohydrates in other forms? Going off all carbs suddenly can bring on headaches and irritability.
  16. I think if you can afford to, you should provide all of the food (gluten-free, of course), and then you don't have to deal with her asking what you can and can't eat. (If she asks if she can bring something, have your husband tell her "no thanks, we have it under control.")
  17. I remembered another one: at work we sometimes have potlucks. At the last one we had, a co-worker made a gluten-free pasta salad just for me. I was a little nervous about it with cross-contamination issues, but I did have a little bit with no reactions.
  18. I really think Amy's should label their gluten-free products differently than their regular products. They all look the same, so it's no wonder some of you have mistakenly bought the wrong kind. I know we should read the ingredients, and it's ultimately our responsibility of what goes into our mouths. But I think they should do something more substantial...
  19. I replaced my plastic storage containers, as well as my teflon pans (because they had scratches in them). It was time for new stuff anyway!
  20. I was pleasantly surprised last night at my book club meeting. Whoever is hosting that month usually serves some finger food and a dessert. Last night our meeting was at one of our newer member's home, and I expected that there would probably be nothing for me to eat. I'm OK with that, because I figure it's my job to take care of my own food planning,...
  21. YOU are amazing. Thanks for posting your menus! Everything sounds delicious.
  22. Westy, you might find, as I did, that you will learn more by reading a book or two and searching this website (and others). Especially if you have to wait a month or two to see her -- by then you'll already have the GFD down pat!
  23. Mine was initially denied, and then I called them (Cigna) to explain that my doctor ordered me to see the dietician. It's not as if I went on my own for weight loss tips. They said, "Oh, okay, no problem. We'll pay it." I asked them if they needed a copy of the order from the doc and they said they didn't. It was paid. (And like others have mentioned...
  24. I have two children, neither of whom have Celiac symptoms. I had both of them tested when they were at the doctor's office for some other reason. Daughter's came back negative last fall, and we haven't received Son's yet (he was just tested last week). I would tell your pediatrician that you feel it would be irresponsible NOT to test them for it, and that...
  25. Get your ducks in a row, and then start the diet (for good this time). When I was first diagnosed, it was 3 days before a 2-week vacation to Europe. I told my doctor that I couldn't/wouldn't go gluten-free immediately, and he told me to go and enjoy my vacation (I was asymptomatic at the time) and start gluten-free when I got back. So I got back...
