If I were you, I wouldn't bother with an endoscopy. You have positive bloodwork. It is extremely rare for false-positives. (False-negatives, on the other hand, are far more likely.) You also have a positive response to a gluten-free diet. If I were you, I would consider myself diagnosed and remain gluten-free. -

I have a small electric food chopper/processor that holds less than two cups of ingredients. I've had it for years and I love it because there are only 3 pieces to wash: the blade, the lid, and the small container. They all go in the dishwasher. Okay, I'm dumb - what's a Bullet? Can you use a food processor or blender instead? That sounds yummy... I will definitely have to try it. Trader Joe's also has some fairly inexpensive gluten-free gingersnaps that I really like. The ones at the bottom of the bag are usually broken, anyway. -
I would feel very hurt if my significant other left me out of family get-togethers. It's one thing if YOU decided you don't want to go over there and opted to stay home. When I went gluten-free, I did not have to avoid dairy at all. It doesn't bother me a bit, but it seems like it's a fairly common thing for people to have to give up, at least for a while. Your mileage may vary. -

Dinty Moore beef stew is also gluten-free. Many kids like it because the vegetables are potatoes and carrots. I think they have it in individual microwavable containers, but check to be sure. -
I got a fairly inexpensive 4-cup Cuisinart model at Bed, Bath and Beyond. It works great, and makes just enough rice for our family.

I don't seem to react either. I've been very strictly gluten-free for 3 months and was accidentally glutened (for the first time, I think) last night at dinner at my sister's house. I use Desert Essence Thoroughly Clean Tea Tree Oil face wash that I get at Trader Joe's. For moisturizing, I use Neutrogena Healthy Skin face lotion. -
