( no starch, sugar, minimal dairy, no grain) and i feel ten times better now then i have during my 3 months being gluten free. i was still having gas, bloating, every day and during the first three days of the new diet it stopped. i think its a good idea to try a more strict diet, if the gluten...

  6. i think you tap the bread with your finger nail, and if it makes a hard tapping sound it's done. and the crust should be light golden brown.
  7. which bread recipe were you looking for?? i have her book, and there are tons of bread recipes in it. are you using a breadmaker or doing it by hand? here is one that sounds good ( i havnt tried it yet) fat-free french bread 2 cups plus 2 tablespoons gluten-free flour mix 2 1/2 teaspoons xanthan gum 1 1/2 teaspoons sugar 1 teaspoon salt 2 teaspoons...
  8. i am just starting the south beach diet. i have researched it and it seems very reasonable. i was always against the atkins diet, but this one seems a lot more health conscious. most of the recipes are gluten free, so i am excited about starting this diet. i spent the first 3 months of my gluten-free life eating tons of rice pasta ad corn tortillias and now...

I still want to try gluten free pantry fav sandwich mix and manna from anna, becuz so many people talk about those two!! But the sylvan borders is GOOD!! my fav gluten-free products are: bumble...
  12. My gluten symptons are gone for the most part except for the gas and slight bloating i have also given up milk and most dairy. I have gas after eating ANYTHING!! I am not sure if the gas even has anything to do w/ my gluten intolerence. But i may try the enzymes. The advice in this thread has been very helpful!!
  13. I am coming up on being 3 months gluten free, and my stools are just starting to be normal again. I know its different for everyone so i can not say it will be the same for your son!! But as long as he stays gluten free after being tested, it will happen eventually. Just make sure he sticks w/ the diet!! I hadnt had a normal BM for a few yrs so i KNOW the...
  14. I was just wondering if i should even bother going to a GI specialist. My doctor suggested this 2 months ago when i wasnt doing so good and has just now gotten around to the referal. I am now 3 months gluten-free and doing ALOT better. I only now have mild symptoms. I was never diagnosed as celiac ( i tested postive for gluten intolerence only) I...
  15. give her some info, but then leave it at that!! you can not force anyone to do anything they do not want to do!! i have two people in my life that i believe have celiac. One is my mother, and the other is a friend. i brought it up with my mom first and she just said " oh no...i dont have that trust me, i know" and then i talked to my friend. " he...
  16. i usually go with friends to their family thanksgiving dinners since my family isn't around here, but i could never impose on people i dont know that well so i'll probably skip it this year. i may make a small gluten-free dinner for my son and i. i thought about ordering the stuffing and pie crust mixes from gluten free pantry and then having turkey with...

  18. hey i just wanted to add my two cents here. I also was a pizza/pasta/bread freak!! And i still am!! I am 2 & 1/2 months glutenfree and i still eat most of the same foods. I make lasagne, sphegetti & other pasta with tinkyada noodles!! they are the best. Alot of rice pasta gets soggy and falls apart but not tinkyada!! Another one i like is...
  19. i use kraft shredded cheese!! most of them are gluten-free but i always read the label just to make sure nothing has changed. but kraft uses celulose powder to prevent sticking!! (not flour)
  20. that sauce sounds good anyway, the way i make mac n cheese is: when the noodles are done cooking, rinse them off and shredd chedder cheese right into the bowl, w/ a little cream and butter. it tastes really yummy, but you have to be quick or the cheese wont melt right. you can also use kraft velveeta (its gluten free)

  24. dont do it!!! i am not feeling THAT better yet, but when i ate gluten at a restaurant i felt really bad for a week. it was felt like food poisoning, and considering how nice the restaurant was i dont think it was food poisoning. bob's red mill makes a gluten-free flour mix...so maybe make a homemade cake using a gluten-free flour mix. i dont know why...
  25. the reason i was saying my date couldnt drink beer is becuz if we ended up kissing i thought i might get gluten in my mouth....is that being too paranoid?? i did go on the date and i took a risk and had some heinikin beer (since they have a gluten free statement.)
