ARCHIVED Shared Equipment
samcarter posted a topic in Gluten-Free Foods, Products, Shopping & Medications
So I never thought I was this sensitive to gluten. I knew that if i actually ate something with gluten, I would start getting the symptoms--headache, sometimes a bad stomach, most often neuropathy. I had been avoiding even stuff with wheat starch (like Pringles). Because I knew that would cause the same symptoms. Then I went to Trader Joe's yesterday... -
ARCHIVED Seems Almost Impossible To Stay Gluten Free
samcarter replied to bluebonnet's topic in Coping with Celiac Disease
I never assume others understand what celiac disease or gluten intolerance is. At our homeschooling group a few weeks ago, the kids were making cat and dog treats, and catnip pillows, for the local humane society. The mom in charge asked me to help the kids with the treats; I asked to see the recipe, and it called for flour. I told her I had celiac disease... -
ARCHIVED Good Gluten Free Vitamins?
samcarter replied to Tigercat17's topic in Gluten-Free Foods, Products, Shopping & Medications
I take NatureMade, the label states gluten free and I have never had problems with them. -
ARCHIVED Juice Plus+
samcarter replied to Lgood22573's topic in Gluten-Free Foods, Products, Shopping & Medications
I am leery of Juice Plus. I went to a demonstration, with my kids, and i felt like I was being indoctrinated into a cult or something! I asked the distributor, how exactly do they dehydrate all these fruits and vegetables, with heat? Because wouldn't that cause vitamin and enzyme loss? She said, no, they didn't use heat. Well, then how? She paused, and... -
ARCHIVED All My Make-up, Shampoo, And Lotion Has Gluten!
samcarter replied to ll79's topic in Gluten-Free Foods, Products, Shopping & Medications
I, too, used to think i didn't need to worry about my shampoos and other personal care products. But then I realized that I've had a scabby, red, painful rash on my forehead, right around my hairline, ever since I started using a JASON brand shampoo that has wheat protein. I didn't check the label, was just using it because it's sulfate-free (i avoid SLS... -
ARCHIVED Shampoo, Conditioner
samcarter posted a topic in Gluten-Free Foods, Products, Shopping & Medications
I was one of those who thought I didn't have to worry if my shampoo or conditioner had gluten in it. I honestly did figure, "I don't get it in my mouth, so what's the big deal?" Well, nearly two years into my gluten-free life, I developed a very annoying rash on my forehead. Red, spotty, with little flakes and "scabs". Painful, too. I thought it was... -
ARCHIVED Dark Circles Under Eyes?
samcarter replied to BloatusMaximus's topic in Coping with Celiac Disease
I've had dark circles all my life, my mother has them as well. (I suspect she has silent celiac; she has rheumatoid arthritis, and her mother died of colon cancer). My mother's have always been very bad, and until recently mine were bad. They are getting better; i can go without concealer under my eyes some days. But then i've only been gluten free a... -
ARCHIVED It's Decided, I Don't Need A Dx To Go Gluten Free
samcarter replied to homemaker's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I went gluten free without a definitive diagnosis. My blood test--my GP would only do the EMA test, which can be negative in up to 20% of celiacs--came back negative, but I already knew that avoiding gluten was helping. It came down to, what am I going to believe, my own body or a lab test done by strangers, prone to human error anyway? -
Yeah. I was dumb; we were in the middle of nowhere with my in laws, stopped at KFC and what with the three kids we were ordering for and trying to get food for everyone, I just went ahead and had the grilled chicken. I didn't seem to have any gluten issues. And it tasted great. So without checking the website, I had some again on Tuesday for my...

ARCHIVED Endomyosil Autoantibodies
samcarter replied to Twiggy's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Contrary to popular opinion, it is not uncommon for celiac patients or those with gluten intolerance to be gaining weight. If your intestines can't absorb nutrients (due to damage of the villi), then your body will react by holding onto calories, since it thinks it's starving. I never had the stereotypical thinness that is associated with celiac. But when... -
ARCHIVED Help! Need Ideas For A gluten-free, Dairy Free, Soy Free Dish To Pass!
samcarter replied to Miss Emily's topic in Gluten-Free Recipes & Cooking Tips
I made this broccoli slaw for a party and it was a huge hit. If you can find mayonnaise that is not made with soybean oil, you're good to go. Make it the day before. 2 heads broccoli, florets separated, stems peeled and cut into 2 inch chunks 1/2 small red onion, minced very fine 1/3 cup dried cranberries 1/4 cup slivered or sliced almonds ... -
ARCHIVED Endomyosil Autoantibodies
samcarter replied to Twiggy's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I had a negative EMA test. It was the only test my doctor would agree to do . I read a paper once that stated about 20% of celiacs can be negative for EMA, they are referred to as "sero negative" celiacs. It could also be that the intestinal damage just isn't incredibly severe yet. All I know is i had a VERY positive response to a gluten free diet... -
ARCHIVED Anybody Have Experience With Low Carnitine Levels?
samcarter posted a topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Long story short: when my third son was born, they did the typical newborn screenings, with a new test added recently in our state: Carnitine levels. Apparently a low level of carnitine can indicate an inborn error of metabolism. My son's level was extremely low, and immediately the assumption was that he had a metabolic disorder. However, then they... -
ARCHIVED My Taste Has Come Alive!
samcarter replied to purplelion's topic in Coping with Celiac Disease
Yep, i've been gluten free for nearly a year, but only recently dairy free. I noticed that my sense of smell has suddenly gotten keener. And foods are more flavorful. Things like pineapple are almost TOO sweet or flavorful. -
I used to get a headache whenever I drank coffee with cream. I tried soy creamer, still had the same effect. It was a headache right above my nose, between my eyes, and very annoying. Felt like a sinus headache. So I switched to black tea, and my allergies got worse. Then I learned that mold can be present in black teas. Now i drink iced coffee with...

ARCHIVED Necessary To Replace Pots & Pans & Utensils?
samcarter replied to shirleyujest's topic in Coping with Celiac Disease
We just replaced all our old Teflon pans this weekend. For a while i'd wanted to do this--we had one saucepan that was so scratched and worn away I was sure I could never really get it clean, so I scoured and boiled the smaller saucepan and used that for any gluten-free stuff. But now we have stainless steel, which, as has been pointed out, has no Teflon... -
ARCHIVED Has This Happened To Anyone?
samcarter replied to adia117's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Oh, yes. After I went gluten free, and then did a gluten challenge, it was so excruciating. Now if I get a little gluten by accident, I can tell almost immediately. It reminds me of when I finally went off to college, and was away from my mom's cats for a little bit, and my cat allergy finally reared its ugly head. It was like once my body was away from... -
ARCHIVED In Case Anyone Was Wondering About..
samcarter replied to Jamie's topic in Gluten-Free Recipes & Cooking Tips
I baked the yellow cake yesterday---it was GOOD! Way better than the Gluten Free Pantry's yellow cake mix. My husband (not gluten-free) said he could tell a difference between the Betty Crocker gluten-free and regular cake, but he allowed that it was much better than the GFP mix. All I can say is, since I hadn't had cake in nearly a year, it was wonderful... -
ARCHIVED Legumes A Problem Now?
samcarter replied to samcarter's topic in Coping with Celiac Disease
The last time I had green beans I just had them lightly steamed with a bit of butter. I tolerate butter fine with other foods. The last time I had any other kinds of beans, I think it was Bush's Baked Beans. And the last time i had peanut butter it was a tablespoon with a few gluten-free pretzels and some dried fruit. Every time I had those--beans,... -
ARCHIVED Anyone With An Eating Disorder?
samcarter replied to eddieisagirl's topic in Coping with Celiac Disease
Yes, I had an eating disorder for about 18 years. I am inclined to think that a lot of it was related to gluten intolerance---bingeing and other disordered eating behaviors can often be linked to depression (which gluten intolerance and celiac disease can cause) and malnutrition (again, linked to celiac and gluten intolerance, because our nutrient absorption... -
ARCHIVED Gluten/dairy/soy Free Ice Cream Brands! Mmm
samcarter replied to Miss Emily's topic in Gluten-Free Foods, Products, Shopping & Medications
I love Purely Decadent. And I'm going to petition my Kroger to carry the Luna and Larry's Coconut bliss, their flavors look wonderful! -
ARCHIVED I Was So Hungry And Afraid I Am Really Sad Right Now
samcarter replied to Cinnamon7778's topic in Coping with Celiac Disease
You could try this one: Open Original Shared Link It's made from brown rice, and is supposed to be dairy free and soy free. You could try almond milk instead of the Rice Dream if you can tolerate almonds. It's higher in protein than rice milk. I myself use Rice Dream, and have been using it for the past week or so, and haven't had any gluten reactions... -
ARCHIVED I Was So Hungry And Afraid I Am Really Sad Right Now
samcarter replied to Cinnamon7778's topic in Coping with Celiac Disease
Then I would recommend adding eggs. If you have quinoa in the morning, one thing I love with quinoa is a gently poached egg (more digestible than hardboiled or scrambled). Or perhaps you could have a smoothie with some protein powder. Bottom line is, you need more protein in your diet. It will keep your blood sugar levels on an even keel. If you... -
ARCHIVED I Was So Hungry And Afraid I Am Really Sad Right Now
samcarter replied to Cinnamon7778's topic in Coping with Celiac Disease
You stated that you were a vegan due to food allergies...are you allergic to eggs? if not, I would really recommend adding eggs to a morning meal. If you are allergic to eggs, are you allergic to all meats? It's rare to be allergic to all meats. Some people are allergic to pork or beef, but rarely are people allergic to chicken. I completely understand... -
ARCHIVED Legumes A Problem Now?
samcarter replied to samcarter's topic in Coping with Celiac Disease
I've been gluten free for nearly a year. I can eat other high fiber foods (berries, other fruits, high-fiber gluten-free crackers, raw broccoli) with no issues. I kind of suspect the beans because, as I said, they pretty much go right through me. Green beans give me horrible intestinal cramps; the other legumes don't, but they have the same effect.
